1 cup fresh green beans, trimmed, or to taste
2 tablespoons olive oil, divided
2 (6 ounce) salmon fillets
1 clove garlic, crushed
1 sprig chopped fresh dill
½ lemon, sliced
½ lemon, juiced
½ teaspoon freshly ground black pepper

1 ½ tablespoons capers, roughly chopped
1 lemon, juiced

SALMON WITH LEMON AND DILL

Salmon with Lemon and Dill image

This is a wonderful (and easy) recipe I got from my Aunt. The flavors of lemon and dill really complement the fish. I like to use wild Alaskan salmon for this recipe, but any salmon will work. I usually don't measure, so these are all estimates. Play with the ingredients to suit your own tastes!

Tips:

  • To ensure even cooking, choose a salmon fillet of uniform thickness. If your fillet is thicker in some areas, you can make a small incision to even it out.
  • Baking the salmon at a high temperature (450°F) for a short time will help to create a crispy skin and prevent the fish from drying out.
  • The lemon-dill sauce is a great way to add flavor and moisture to the salmon. If you don't have fresh dill, you can use 1 teaspoon of dried dill.
  • Be careful not to overcook the salmon. The fish is done when it is opaque throughout and flakes easily with a fork.
  • Serve the salmon immediately with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.

Conclusion:

This lemon-dill salmon recipe is a quick and easy way to prepare a delicious and healthy meal. The salmon is packed with protein and omega-3 fatty acids, and the lemon-dill sauce adds a bright and flavorful touch. This dish is perfect for a weeknight dinner or a special occasion.
