Number Of Ingredients 9

1 cup flour
1/4 cup confectioners' sugar
1/2 cup melted butter
1 cup sugar
1/2 teaspoon baking powder
2 slightly beaten eggs
2 tablespoons lemon juice
2 teaspoons grated lemons, rind of (optional)
1/2 cup flaked coconut (optional)

Steps:

  • Mix 1st three.
  • Press into an 8" square pan.
  • Bake at 350 for 20 minutes.
  • Meanwhile, mix all the rest.
  • Pour over hot crust.
  • Bake 25 more minutes.
  • Chill.
  • Sprinkle with confex sugar when cold.
