1.5 cups panko bread crumbs
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
0.75 cup mayonnaise, divided
2 large eggs, beaten
1 tablespoon Dijon mustard
1.5 teaspoons Old Bay seasoning
1 pound jumbo lump crab meat
3 tablespoons finely chopped chives, divided
1 teaspoon lemon zest

Steps:

  • Combine the panko and olive oil in a medium nonstick skillet over medium heat. Cook, stirring constantly, until the panko is toasted and golden brown, about 5 minutes. Transfer to a shallow container to cool and season with salt and pepper. Set aside for later.

3 pounds small boiling potatoes
1 cup chopped celery (about 4 ribs)
