GREEK LEMON CHICKEN AND POTATO BAKE

Greek Lemon Chicken and Potato Bake image

I love one-pan meals, especially when no measuring and exact ingredients are involved. I made this one Sunday when I didn't want to babysit my food in the kitchen! Turned out great, and I served it with tzatziki sauce.

Time 1h10m

Yield 4

Number Of Ingredients 10

4 chicken leg quarters
1 (24 ounce) bag small potatoes
½ cup olive oil
2 lemons, juiced, divided
2 tablespoons dried basil
2 tablespoons dried oregano
1 tablespoon salt
1 tablespoon ground black pepper
2 tablespoons lemon and herb seasoning
1 (12 ounce) package fresh green beans

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a large baking sheet with sides.
  • Place chicken quarters on prepared baking sheet. Stir potatoes, olive oil, juice of 1 lemon, basil, oregano, salt, pepper, and lemon herb seasoning together in a large bowl to coat potatoes. Arrange potatoes around chicken on baking sheet. Pour about 3/4 of oil mixture over chicken, reserving remaining oil; drizzle remaining lemon juice over chicken and potatoes.
  • Bake in the preheated oven for about 30 minutes; shake baking sheet to loosen potatoes, then continue baking for 15 minutes. Place green beans in reserved oil mixture; toss to coat. Remove chicken mixture from oven; pour green bean mixture over chicken and potatoes.
  • Return pan to the oven; bake until green beans are tender with a bite, chicken is no longer pink at the bone and juices run clear, about 15 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

LEMON-PEPPER BASTE AND BAKE CHICKEN

Lemon-Pepper Baste and Bake Chicken image

Similar to the Boston Market chicken but a zippy lemon-pepper version

Provided by Rhonda Sine

Categories     Chicken

Time 1h

Number Of Ingredients 8

2 lb chicken pieces, rinsed and patted dry
1/4 c vegetable oil
1 Tbsp honey
1 lemon, zested
1 Tbsp lemon juice, fresh
1/4 tsp paprika
1/4 tsp lemon-pepper seasoning
1/4 tsp salt

Steps:

  • 1. Preheat your oven to 400 deg. Fahrenheit. Mix all ingredients but chicken in a small-sized bowl. In a baking dish or pan, put the chicken in a skin-side-up position. Use a 9 x 13 dish. In a single layer, apply the mixture you have made earlier to each chicken piece. Bake the chicken for about 35 to 40 minutes. Baste the chicken every 8 to 10 minutes. Chicken is done when the skin turns brown and the juices are clear when you try to slice the thickest portion of the chicken. Remove from the oven. Cover the chicken pieces with foil for approximately 15 minutes to make it soft and keep it warm until you serve it.

Tips:

  • Use a flavorful cut of chicken. Bone-in, skin-on chicken thighs or breasts will give your dish the most flavor.
  • Don't overcrowd the baking dish. This will prevent the chicken from cooking evenly.
  • Roast the chicken at a high temperature. This will help to create a crispy skin and juicy meat.
  • Baste the chicken with the lemon-herb sauce every 15 minutes. This will help to keep the chicken moist and flavorful.
  • Serve the chicken with your favorite sides. Roasted vegetables, mashed potatoes, or rice are all great options.

Conclusion:

Lemon chicken bake is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of lemon, herbs, and garlic creates a flavorful sauce that pairs perfectly with the tender chicken. This dish is sure to be a hit with your family and friends.
