2 cups unbleached all-purpose flour, plus more for pan
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
2/3 cup whole milk
1 tablespoon finely grated lemon zest, plus 1/3 cup fresh juice
1 cup granulated sugar
2 teaspoons pure vanilla paste or extract
2 large eggs, room temperature
6 ounces cream cheese, room temperature
6 tablespoons unsalted butter, room temperature
1 cup plus 2 tablespoons confectioners' sugar, sifted
1/4 ounce freeze-dried raspberries (1/3 cup), finely ground
Fresh raspberries, for serving

Steps:

  • For the Cake: Preheat oven to 350°F. Brush a 9-inch round cake pan with butter. Line bottom with parchment; brush with butter. Dust with flour, tapping out excess.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt. In another, stir together milk and lemon juice. In the bowl of a mixer fitted with the paddle attachment, beat butter with lemon zest, granulated sugar, and vanilla on medium speed until light and fluffy, 3 to 4 minutes. Beat in eggs, one at a time.
  • Reduce speed to low; beat in flour mixture in three additions, alternating with milk mixture, just until no dry flour remains (do not overmix). Transfer batter to prepared pan; smooth top. Bake until cake is golden and springs back when gently pressed, about 40 minutes. Transfer pan to a wire rack; let cool 20 minutes. Turn cake out onto rack, remove parchment, and let cool completely.
  • For the Frosting: In a bowl, beat cream cheese and butter until light and fluffy, 2 to 3 minutes. Beat in confectioners' sugar and freeze-dried berries until smooth.
  • Spread frosting over top of cake. Decorate with fresh berries. Cake is best served on the same day, but can be refrigerated in an airtight container up to 2 days.

Steps:

  • For cake:
  • Preheat oven to 325°F. Butter and flour two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Whisk flour, sugar, baking soda, salt and spices in large bowl. Make well in center of flour mixture. Add oil, eggs, milk and vanilla; whisk just until evenly moistened. Fold in pears and nuts; divide between pans.
  • Bake cakes until tester inserted into center comes out clean, about 45 minutes. Cool cakes in pans on racks.
  • For frosting:

Steps:

  • Preheat oven to 350 degrees. Lightly butter a 9-by-13-inch baking pan; dust with flour. Whisk together flour, baking powder, baking soda, and salt.
  • Beat butter with 1 cup sugar on medium speed in a mixer fitted with the paddle attachment until light and fluffy, 5 minutes. Found this in a local newspaper. Can't wait to try it. Wanted to post it before I lose it. Meyer lemons are a type of lemon, they are a cross between a lemon and a mandarin orange. Their are sweeter and a little less acidic flavor. These lemons are from California and are found across the country. Look in your grocery stores or specialty stores. Whole Foods, Wild Oats, Schnucks, Dierbergs, and Straubs in the Midwest. The season runs from November to May. Chefs are said to love to cook with these lemons.

3 tablespoons cold butter, cubed

Steps:

  • Heat oven to 350° F. Spray 13 x 9-inch pan with cooking spray.
  • In large bowl, measure 2 1/2 cups Bisquick™ mix. In large measuring cup or bowl, beat 2 eggs, 1 cup sugar, the milk, 2 tablespoons lemon peel and 2 tablespoons lemon juice. Fold into Bisquick™, followed by melted butter. Spread batter in pan.
  • In medium bowl, beat Cream Cheese Mixture ingredients with electric mixer on medium speed until smooth and combined. Drop mixture by dollops all over top of batter; swirl using butter knife.

1 (3.5 ounce) package instant vanilla pudding mix
1 cup milk
⅓ cup vegetable oil
3 eggs
6 egg yolks
1 ½ cups white sugar
1 cup butter
¼ cup all-purpose flour
1 cup fresh lemon juice
4 tablespoons grated lemon zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9 inch round cake layer pans.
  • Combine the cake mix, instant vanilla pudding, milk, vegetable oil and the 3 whole eggs. Mix until blended. Pour batter into the prepared pans.

Steps:

  • Preheat oven to 325 degrees.
  • Butter and flour two 9-inch cake pans with 1 1/2 inch high sides.
  • Whisk flour, sugar, baking soda, salt and spices in large bowl.
  • Make well in center of flour mixture.
  • Add oil, eggs, milk and vanilla; Whisk just until evenly moistened.
  • Fold in pears and nuts and divide between pans; Bake cakes for about 45 minutes.
  • Beat cream cheese, butter, powdered sugar, vanilla and lemon peel in large bowl until fluffy.
  • Add honey and beat until smooth.
  • If frosting is very soft, chill until firm enough to spread.
  • Place 1 cake layer, flat side up on a platter.
  • Spread 1 cup frosting on cake.

6 large eggs, room temperature
1 cup unsalted butter, room temperature
3 cups pure cane granulated sugar
1 tablespoon lemon flavoring (Lemon, LorAnn Gourmet baking emulsion)
1 lemon, zested
2 1/2 teaspoons fresh lemon juice
3 cups cake flour
1 cup heavy whipping cream
8 ounces cream cheese, softened
4 tablespoons unsalted butter, room temperature
3 1/2 teaspoons fresh lemon juice
1 lemon, zested
4 cups powdered sugar
heavy whipping cream

Steps:

  • For cake: Preheat oven to 350 F, and prepare pans with parchment circles and lightly spray with baking spray. Using a stand mixer or hand mixer, cream butter and sugar until light and fluffy, approximately 3 minutes. Add baking emulsion, lemon zest, lemon juice and mix well. Add eggs one at a time and mix until well incorporated. Add flour and heavy whipping cream, alternating each a third at a time, ending with the whipping cream. Mix until combines, but do not over mix, approximately 2 minutes.
  • Divide batter between pans. Bake in preheated oven for 38 to 40 minutes. Check cake at 38 minutes to make sure it is not over baking (cake will pull away from the edges). Insert a cake tester or toothpick at the center of the cake. If toothpick removes clean, then it is done. Place on cooling racks in pan for 15 minutes. Remove from pan and let cake cool completely.
  • For the frosting: In a large bowl, cream together cream cheese and butter until smooth and fluffy. Add lemon juice, zest, and powdered sugar and stir to combine. Add whipping cream 1 or 2 tablespoons at a time to reach spreadable consistency. Use immediately. Yields 3 cups.

CREAM CHEESE FILLING:
1 (8-ounce) pkg cream cheese, room temperture
1 c confectioner's sugar
1 egg, room temperture
3 Tbsp unsalted butter, melted
1 Tbsp fresh lemon juice, (juice from 1/2 of a large lemon
1 tsp lemon extract
1/2 tsp vanilla
zest of 1/2 of a large lemon
CAKE BATTER
2/3 c all purpose flour
1/3 c sugar
2 tsp baking powder
1/2 tsp kosher salt
1/2 c unsalted butter, melted and slightly cooled
2 eggs, room temperture
2 Tbsp fresh lemon juice, (juice from 1 large lemon)
1/2 tsp vanilla
lemon zest, from 1 1/2 large lemons
1 c frozen blueberries, or fresh
confectioners' sugar (optional for dusting cake)
BLUEBERRY SAUCE
1 Tbsp cornstarch
1/4 c sugar
2 c frozen blueberries, or fresh
1 Tbsp fresh lemon juice (juice of 1/2 large lemon)
zest of 1 small lemon
1/2 tsp vanilla extract
pinch of salt
WHIPPED CREAM TOPPING
1 c very cold heavy whipping cream
1/4 c powdered sugar
1/2 tsp lemon extract

Steps:

  • 1. First; set out butter, cream cheese and eggs about an hour prior to baking and let them come to room temperture.
  • 2. Preheat oven to 325 degrees. Prepare 10-spring from pan with cooking spray. I used "Joy Baking Spray". Go ahead and zest and juice your lemons; set aside. 1 1/2 large lemons for cake batter and 1/2 lemon for filling. And, if you are making the blueberry sauce you will need to zest and juice 1/2 large lemon.
  • 3. CREAM CHEESE FILLING: In the bowl of stand mixer, beat cream cheese on medium-high speed until smooth about 5 minutes, scraping bowl as needed. Add confectioners' sugar and beat another 2 to 3 minutes. Add egg; beat until completely combined, about 1 minute. Add butter, lemon juice, lemon and vanilla extract and zest; beat 1 minute; set aside.
  • 4. CAKE BATTER: In a batter bowl (or large bowl) combine flour, sugar, baking powder and salt; whisk together. Whisk in melted butter, eggs, lemon juice and vanilla; don't over beat. Gently fold in blueberries.
  • 5. Pour batter into 10-inch prepared spring-form pan. Gently pour cream cheese filling into center of cake batter; spread gently to within 1/2 of sides of pan (the filling should cover all of the cake batter except for 1/2-inch of the outter edge of the cake batter, 1/2-inch of the batter should be visable).
  • 6. Bake at 350 degrees for 35 to 40 minutes or until until toothpick inserted near the edge of cake comes out clean. Remove from oven and cool on wire rack for 10 minutes. Carefully remove sides from spring-form pan and allow cake to cool for 1 hour.
  • 7. BLUEBERRY SAUCE: In a small saucepan, add the cornstarch and sugar. Whisk together. Stir in 1 cup of the blueberries, the lemon juice, zest, vanilla and salt. Cook the mixture over medium heat for 4-5 minutes, until thickened. Stir in the remaining blueberries and cook for 2 minutes. Cool and store in the refrigerator for up to a week.
  • 8. WHIPPED CREAM TOPPPING: Pour cold whipping cream into a cold bowl. Beat on high speed of hand mixer until it starts to thicken; add sugar and lemon extract; continue beating until it forms a peak. Refrigerate until ready to serve.
  • 9. When cake is completely cool; spinkle with powered sugar; slice and serve as is.
  • 10. Or, add whipped cream and blueberry sauce! Keep any remaining cake refrigerated. ENJOY!

Coffee Cake
1 1/2 cups flour

1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegetable oil
3/4 cup sugar
1 egg
1/2 cup Greek yogurt
zest of one lemon
1 tablespoon fresh lemon juice
Crumb Topping
1/2 cup flour
1/4 cup sugar
2 tablespoons cold cubed butter
powdered sugar for dusting

Steps:

  • Preheat oven to 350 degrees. Prepare an 8 x 8 inch baking dish by lining it with parchment paper, leaving extra paper hanging over two of the sides. If you don't have parchment paper, spray the dish with non-stick cooking spray. In a medium bowl, stir together cream cheese, sugar, egg, and lemon juice until smooth and creamy. Set aside. In another medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside. In the bowl of an electric stand mixer, mix oil and sugar. Add egg and mix well. Add Greek yogurt, lemon zest and lemon juice. Mix well on medium speed until smooth and creamy. Gradually add the flour mixture to the batter and mix until incorporated on low speed. To make the crumb topping, pour the flour, sugar and cold cubed butter into a medium bowl, and using a pastry cutter or two forks, cut the butter into the flour and sugar until you are have pea sized crumbs of flour coated butter. Pour the crumb mixture over the cream cheese layer. Bake the coffee cake at 350 degrees for 37-40 minutes. Allow to cool, and then dust with powdered sugar. Remove from the dish using parchment paper to a cutting board, and cut into 16 squares.

I love using fresh herbs and lemon balm is one of my favorites. It has a nice lemony fragrance and it tastes wonderful either as a tea or as an ingredient, pare it with fresh lemons and you are in lemon heaven! My 9 year old grandson loves this recipe and requests it often.

1 c graham cracker pie crust
1/4 c finely chopped pecans
1/4 c melted butter
2 pkg cream cheese, soften
1/4 c sour cream
1/2 c sugar
2 eggs lightly beaten
1 tsp finely chopped fresh lemon balm
1/2 tsp vanilla extract
1 lemon, juice and rind

Steps:

  • 1. In a small bowl combine the first 3 ingredients and press into a pie pan, set aside.
  • 2. In a large bowl, I used my stand-up mixer, beat the cream cheese, sugar and sour cream until nice and smooth. Add the eggs and beat on low speed just until combined then add the vanilla, lemon balm, and the juice and rind of 1 lemon.
  • 3. Bake at 350° for 35 to 40 minutes or until the center is almost set. Cool on a wire rack. Top with fresh strawberries and lemon sauce. See the attached recipe for my lemon sauce recipe. Enjoy!

In a medium bowl, beat together all the remaining ingredients for the cake. Pour into the dry ingredients and mix well. Divide evenly between the three pans. 3. Bake for 30-35 minutes until the cake bounces back when gently touched in the center. While the cake bakes, use a wooden spoon to beat together the cream cheese, butter and lemon zest until smooth. Add the remaining frosting ingredients and mix until smooth and lump free. 4. Cool the cakes for 10 minutes in the pan, then invert onto a cooling rack. Remove the pan and slowly peel away the wax/parchment paper liners. Allow to cool completely before frosting.

1 teaspoon baking powder
3 extra-large eggs, separated
1/3 cup sugar
1 teaspoon pure vanilla extract
3 drops lemon extract
3 tablespoons unsalted butter, melted
1/4 teaspoon cream of tartar
2 tablespoons sugar
2 (8 ounce) packages cream cheese
1 (14 ounce) can sweetened condensed milk
3 eggs
1/4 cup lemon juice
2 cups sour cream
3 tablespoons sugar
2 teaspoons vanilla
2 tablespoons cornstarch
1/4 cup sugar
1 1/2 cups boiling water
1 teaspoon grated fresh lemon rind
2 tablespoons lemon juice

Steps:

  • Sponge Cake Layer.
  • Preheat oven to 350 degrees and generously butter a 9-inch springform pan.
  • Sift cake flour, baking powder, together in a medium-sized bowl and set aside.
  • Beat egg yolks together in a large bowl with an electric mixer on high for 3 minutes.
  • Then, with mixer still running, gradually add sugar continue beating until thick and light-yellow about 5 minutes longer.
  • Beat in vanilla and lemon extracts.
  • Sift flour mixture over batter and gently stir it in by hand then blend in butter.
  • In a clean bowl, using clean, dry beaters, beat egg whites and cream of tartar together on high until frothy.
  • Gradually add sugar and continue beating until stiff peaks form.
  • The whites should stand up in stiff peaks, but not be dry.
  • Stir about 1/3 cup of whites into the batter, then gently fold in remaining whites.
  • Gently spoon batter into the pan.
  • Bake cake just until center of the cake springs back when lightly touched, only about 10 minutes.
  • Let cake cool in pan on a wire rack while making cheesecake filling.
  • Do not remove from pan.
  • CHEESE CAKE.
  • Preheat oven 300 degrees F.
  • In large mixer bowl beat cheese until fluffy.
  • Gradually beat in condensed milk until smooth.
  • Add eggs one at a time and lemon juice.
  • Evenly pour cheese filling on top of baked sponge cake.
  • Bake 50-55 minutes, until center is set.
  • Remove from oven; turn oven to 500 degrees F.
  • Mix sour cream, sugar and vanilla well; spread evenly over top of cheese cake; return to oven bake 5 min.
  • Remove from oven, cool, chill for several hours; best over night.
  • LEMON SAUCE.
  • Combine cornstarch and sugar in a small saucepan.
  • Slowly stir boiling water into the sugar mixture.
  • Cook over low heat, stirring constantly, until the sauce is smooth and thickened.
  • Cover and cook over very low heat or over boiling water in a double boiler, stirring occasionally, until no raw starch taste remains, about 5 to 7 minutes.
  • Remove from heat and stir in lemon rind and juice.
  • Cool.
  • When ready to serve cheese cake drizzle over servings.

Steps:

  • 1. Heat oven to 325°F. Generously spray 10- or 12-cup fluted tube cake pan.
  • 2. In large bowl, beat Cake ingredients with electric mixer on low speed 1 minute, scraping bowl constantly. Increase speed to medium; beat 2 minutes. Pour into pan.
  • 3. Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; turn upside down onto cooling rack or heatproof serving plate, and remove pan. Cool completely, about 1 hour.
  • 4. Place cake on serving plate. In medium bowl, beat powdered sugar and lemon juice, a little at a time, using whisk until thick glaze forms. (You may not need all the juice.) Pour evenly over cake. Store cake loosely covered.
