My husband loves chicken, so when we bought our first charcoal grill, we needed a recipe for barbecued chicken. We ended up combining two recipes to come up with this one. We've used it the past 3 or 4 years now and haven't come across any recipe that's better.

2/3 cup lemon juice
1/3 cup cider vinegar
1/3 cup vegetable oil
1 tablespoon soy sauce
2 teaspoons sugar
1 teaspoon salt
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1 medium onion, chopped
1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up

Steps:

  • Whisk together the first 10 ingredients. Add onion; set aside 1/4 cup. Pour remaining marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate at least 8 hours or overnight, turning occasionally. , Drain and discard marinade. Grill the chicken, covered, over indirect medium heat for 45 minutes or until juices run clear, turning and basting with reserved marinade every 8-10 minutes., To bake chicken: After marinating, place chicken in a greased 15x10x1-in. baking pan. Pour the remaining marinade over the chicken. Bake, uncovered, at 350° for 1-1/4 hours or until juices run clear, basting occasionally.

1/4 cup olive oil
1/4 cup fresh lemon juice
2 tablespoons herbes de provence
1/4 teaspoon fresh ground black pepper
6 (3 ounce) boneless skinless chicken breast halves
vegetable oil cooking spray

Steps:

  • In a 1-gallon self-closing plastic bag, combine oil, lemon juice, herbes de Provence, black pepper, and chicken; seal the bag and shake to coat.
  • Refrigerate 30 to 60 minutes.
  • When you are ready to cook, spray a grill rack with cooking spray. Preheat a gas grill to medium/medium-high or prepare a medium-hot fire in a charcoal grill, with the rack placed 4 to 6 inches above the heat.
  • Remove chicken from marinade and discard marinade.

Being a Diabetic , its hard to come up with something good that you want to eat. One night I had 3 Boneless , skinless chicken breast ,I know very appetizing Right? Well it was after I got finished with it. Add some Rigatoni tri-colored pasta and some green veggies and good Crusty Bread and enjoy

3 medium chicken breasts, boneless and skinless
3 1/3 Tbsp flour,
2 large eggs, beatened
1 1/4 c italian bread crumbs
salt and pepper,season salt
3 Tbsp oil
1 lemon sliced, and zested
1/2 c lemon juice concentrate
3 Tbsp butter

Steps:

  • 1. Set up your Dredging Station One for seasoned flour , one for the egg mixture and one for the breadcrumbs. Take your Chicken Breast and Slice through the middle to make it thinner and almost like you were butter flying it but its all the way through. take a large piece cling wrap and lap it down add a tiny bit of water so it doesn't stick , lay chicken down cover with other end of wrap and pound chicken fillets thin , do all of them before you start to dredge.
  • 2. To Dredge: Do flour, Egg, then Bread crumbs Shake lightly to get off excess. Heat Pan with the oil , when hot add chicken and brown golden , ( doesn't take too long) set aside when all done . Take the butter and add to pan melt, add, lemon juice and mix together ,add Zest and let cook for 10 minutes . remove from heat. place on platter pour lemon sauce over chicken add lemon slices for garnish. enjoy.
