1.5 lb Cod fillet pieces, (4-6 pieces)
1/4 cup chopped fresh parsley leaves
5 tbsp fresh lemon juice
5 tbsp extra virgin olive oil
2 tbsp melted butter
5 garlic cloves, (minced)
1/3 cup all-purpose flour
1 tsp ground coriander
3/4 tsp sweet Spanish paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together the lemon juice, olive oil, and melted butter in a shallow bowl (do not add the garlic yet). Set aside.
  • In another shallow bowl, mix the all-purpose flour, spices, salt and pepper. Set next to the lemon sauce.
  • Pat the fish dry. Dip the fish in the lemon sauce then dip it in the flour mixture. Shake off excess flour. Reserve the lemon sauce for later.
  • Heat 2 tbsp olive oil in a cast iron skillet (or an oven-safe pan) over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add the fish and sear on each side to give it some color, but do not fully cook (about 2 minutes on each side). Remove the skillet from heat.
  • To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets.
  • Bake in the heated oven until the fish flakes easily with a fork (10 minutes should do it, but begin checking earlier). Remove from the heat and sprinkle chopped parsley. Serve immediately.

2 cod, steaks, about 2 inches thick (about  3/4 pound)
1 lb broccoli, rape with hard stems removed or 1 lb kale, washed with hard stems removed
5 tablespoons extra virgin olive oil
3 garlic cloves, crushed
1 dried hot peppers or 1 hot pepper flakes
1/2 cup black olives, cured in oil
1 pinch salt
1/3 lb feta cheese
1 pinch oregano
1 large ripe tomatoes
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350*F.
  • Bring a large pot of salted water to a boil. Add in the rape or kale. When the water comes back to a boil, drain and set aside.
  • In a bowl chop and crush the tomatoes, lemon juice and add a pinch of oregano, 3 tablespoons olive oil, and crushed cloves of garlic. Mix everything together well.
  • In a large baking pan, dribble the remaining 2 tablespoons of olive oil. Add the drained rape or kale, the olives and the codfish steaks.
