2 tbsp. olive oil
2 carrots, thinly sliced
2 celery stalks, thinly sliced
1 small onion, chopped
1 c. green beans
3 garlic cloves, finely chopped
3 tbsp. all-purpose flour
8 c. chicken stock
1 tbsp. chopped fresh rosemary
2 tsp. kosher salt, plus more to taste
1/2 tsp. dried thyme
1/2 tsp. dried oregano
1/2 tsp. ground black pepper
3/4 c. uncooked orzo pasta
3 c. chopped cooked turkey
2 c. packed baby spinach leaves
1/4 c. fresh lemon juice, optional
Ground black pepper, to taste

Steps:

  • Heat the oil in a large Dutch oven over medium-high heat. Add the carrots, celery, onion, and green beans. Cook 7 minutes or until vegetables begin to soften. Add the garlic and cook 1 minute. Stir in the flour. Cook, stirring constantly, for 2 minutes.
  • Slowly stir in the stock, rosemary, salt, thyme, oregano and black pepper and bring to a boil. Stir in the orzo. Reduce heat to medium so that the soup gently boils and cook for 8-10 minutes (until the orzo is tender). Add the turkey, spinach, and lemon juice, if using. Cook for 1 more minute or until spinach wilts. Season with more salt and black pepper and serve immediately.

CREAMY TURKEY SOUP

My mother always prepared a holiday turkey much larger than our family could ever eat in one meal so there'd be plenty of leftovers. That's one tradition I've kept up. This hearty soup uses a lot of turkey and is great after watching football games and raking leaves. -Kathleen Harris, Galesburg, Illinois

Tips:

  • Use leftover turkey: To ensure the freshest flavor, use leftover turkey that has been refrigerated for no more than 3-4 days after cooking. Remove any skin or bones before shredding or dicing the turkey.
  • Choose a creamy base: To achieve a smooth and velvety soup, consider using a combination of heavy cream and cream cheese. Alternatively, you can use a roux made with butter and flour to thicken the soup.
  • Add vegetables for extra flavor and texture: Enhance the soup's flavor profile by incorporating vegetables like carrots, celery, onions, and garlic. Sautéing the vegetables before adding them to the soup brings out their sweetness and depth of flavor.
  • Season to taste: Don't be afraid to adjust the seasoning according to your personal preferences. Add herbs like thyme, rosemary, or sage to enhance the soup's savoriness. A touch of salt, pepper, and a pinch of cayenne pepper can also elevate the flavor.
  • Serve with a variety of toppings: Elevate the soup's presentation and offer multiple flavor dimensions by serving it with an array of toppings. Consider options like crispy bacon, shredded cheese, croutons, chopped fresh herbs, or a drizzle of olive oil.
