- 1. In a large soup pot cover ham bone with water ( ham hocks may be used if no meaty ham bone leftover)
- 2. Add chopped celery Onions Carrots Tomatoes
- 3. Add garlic powder, bay leafs , tomato paste
- 4. Add lentils
- 5. Simmer about two hours after bringing to a boil first
- 6. Stir in olive oil at the end REMOVE ALL BAY LEAVES!!!!
- 7. Cut meat off ham bone add to soup Toss bone away

- Heat olive oil over medium heat in a large stockpot. Add onion; cook and stir until softened and translucent, 3 to 4 minutes.
- Place potatoes, ham, carrots, celery, parsley, and Italian seasoning into pot. Cook and stir until vegetables begin to soften, about 5 minutes. Add bay leaves, chicken broth, corn, and peas and bring to a boil, about 5 minutes. Reduce heat to medium and cook until vegetables have cooked down and are tender, about 20 minutes.

- Soak white navy beans in a bowl of cold water in the refrigerator for 8 hours to overnight. Rinse thoroughly.
- Place ham bone in a large pot with water to just cover. Bring to a boil and cook for at least 4 hours. Add onion, garlic, and pepper and simmer 1 hour more.
- Remove ham bone; strip any meat from the bone and return it to the pot. Add chopped leftover ham, soaked and rinsed navy beans, split peas, and carrots and bring soup to a simmer. Cook until peas begin to break down, about 1 hour. Season with salt.

What a great recipe to use leftover ham and the ham bone. I'm always looking for tasty soup recipes, and this is one I will definitely be making again. The flavor combination is lovely... will definitely warm you up on a cold winter day.

- 1. In a large (deep) pot, cook the bacon till crispy. Remove bacon and set aside in a paper towel lined bowl, leave the bacon drippings in the pot. Add chopped onion to the bacon drippings and cook until tender and transparent, about 15-20 minutes.
- 2. Add bay leaves and garlic, sauté for about 3 minutes. Add leftover ham, water and chicken bouillon cubes...bring to a boil. Once at a boil reduce heat to low and cook until the ham starts to release from the bone, about two hours.
- 3. Once the ham has started to release from the bone, remove the bone from the pot...you may need to cut some of the ham off the bone. Any large pieces of ham will need to be cut into smaller chunks. Add any ham that you had removed from the bone back into the pot along with the remaining ingredients. Cook for another 15-20 minutes until veggies are tender. Add soup to bowls and sprinkle with reserved bacon pieces.
