I found this on the web and adapted it to make a fabulous salad. I would never have thought of putting cinnamon in a dressing but it really works here. I have sometimes left the mint out and just increased the amount of the two other herbs.

2 whole wheat pita bread
3 tablespoons fresh parsley, chopped
3 tablespoons of fresh mint, chopped
3 tablespoons cilantro, chopped
2 scallions, thinly sliced
1 red peppers or 1 green pepper, thinly sliced
3 medium tomatoes, diced
4 cups lettuce, chopped and washed
1 tablespoon sumaq
4 tablespoons olive oil
2 lemons, juiced
1/2 teaspoon cinnamon
salt, to taste
fresh ground pepper, to taste

Steps:

  • Place the herbs, lettuce, cilantro, scallions, pepper and tomatoes in a bowl.
  • Separately, whisk together the olive oil, lemon juice, cinnamon, salt and pepper.
  • Toss the dressing together with the salad and let rest for 15 minutes.
  • About 5 minutes before you want to eat, toast the pita breads and then cut each in half crossways.
  • Cut each half into 3 strips to make 12 pieces.
  • Arrange 6 strips around each plate and heap the salad in the middle.

2 (6-inch) pita loaves with pockets
1 1/2 tablespoons fresh lemon juice
1 teaspoon pomegranate molasses (optional)
1/3 cup extra-virgin olive oil
1 cup fresh flat-leaf parsley, torn if large
1/2 cup fresh mint, torn if large
1/4 cup purslane leaves (optional)
2 pounds tomatoes, cut into wedges

Steps:

  • Preheat oven to 375°F.
  • Split pita loaves and toast on a baking sheet in middle of oven until golden, 10 to 15 minutes. Cool pitas on a rack and break into bite-size pieces.
  • While pitas are toasting, whisk together lemon juice, pomegranate molasses, and salt to taste in a serving bowl, then whisk in oil until emulsified.
  • Add pitas to dressing with remaining ingredients and toss to combine.

¼ cup lemon juice
¼ cup olive oil
1 tablespoon ground sumac

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place pita bread on a baking sheet.

1 large tomato, diced, seeds removed
1/4 red onion, diced
2 bell peppers, one red, one yellow, pith and seeds removed, cut into long strips
1 cucumber, peeled and cut in rounds
5 radishes, sliced
2 whole scallions, chopped
1 head of romaine lettuce, purslane or other wild greens
1/4 cup coarsely chopped fresh mint
1 to 3 teaspoons ground sumac, available in Middle Eastern markets
1 teaspoon dried mint
2 cloves garlic, peeled and minced (about 2 teaspoons)
1/3 cup extra virgin olive oil
Juice of 1/2 lemon
4 teaspoons pomegranate syrup
1 teaspoon salt, or to taste

Steps:
