1 (3 3/4 ounce) package instant vanilla pudding
1 1/2 cups milk
1 (8 ounce) container Cool Whip, thawed
1 (11 ounce) can mandarin oranges, drained
1 (20 ounce) can chunk pineapple, drained
1 (16 ounce) can fruit cocktail, drained

Steps:

  • Beat with mixer the pudding and milk for 2 minutes. Add cool whip, then fruits. This keeps for one week in the refrigerator.
  • Option: Add minature marshmallows, fresh grapes or bananas. Add just before serving.

1/2 C pecans
1/2 C coconut (flaked)

  • Stir together pineapple, fruit cocktail, oranges and pudding, mix well. Stir in whipped topping. Pour into deep dish then sprinkle with nuts and coconut. Refrigerate before serving.

When I have fruit around for over a week, I try to make this fruit salad and leave it right in the middle shelf of the refrigerator with a large ladle in it...where they can all see and eat something healthy without too much work on their part!

1 pint fresh strawberries
3 apples (I use someting tart)
3 oranges (I use navel)
1 jar maraschino cherry
1 can mandarin orange

Steps:

  • Have a large bowl ready to put everything in!
  • Hull strawberries and slice into bite size pieces.
  • Peel apples and chop into bite size cubes.
  • Cut oranges in half and cut out segments with a sharp knife.
  • Squeeze juices from remains into bowl.
  • Add the cherries and mandarin oranges, with juices.
  • Stir until combined, cover and refrigerate.
  • Serve when well chilled.
