SKILLET CHICKEN CORDON BLEU

Skillet Chicken Cordon Bleu image

I love making Chicken Cordon Bleu which I usually bread, roll and bake. But I wanted something quick with the same ingredients and came up with this - lazy chicken cordon bleu made all in one skillet. This is great with roasted veggies or you can serve this with rice pilaf.

Time 25m

Number Of Ingredients 12

4 thin boneless (skinless cutlets, 4 oz each)
1/2 teaspoon kosher salt
1/4 cup all purpose flour*
1/2 teaspoon butter
1 1/2 teaspoons olive oil
2/3 cup reduced sodium chicken broth
1 tbsp fresh lemon juice
1/2 tablespoon Dijon mustard
4 thin slices low sodium deli ham (I use Boar's Head (3 oz total))
4 slices light Swiss Cheese such as Alpine Lace (3 oz total)
chopped fresh parsley (for garnish)
* All purpose gluten-free flour works well here.

Steps:

  • Season chicken with salt and pepper, to taste.
  • Place the flour in a shallow dish. Lightly dredge the chicken with flour on both sides, shaking off the excess reserving the flour.
  • In a small bowl combine the chicken broth, lemon juice, Dijon mustard and 1 teaspoon of the reserved flour, whisk until smooth.
  • Heat a large nonstick skillet over medium-high heat. Melt the butter and add 1 teaspoon of the olive oil and half of the chicken.
  • Cook 2 minutes on each side, until slightly golden, then transfer to a dish.
  • Add remaining 1/2 teaspoon olive oil and remaining chicken and cook 2 minutes on each side.
  • Set aside on a dish with the other pieces of chicken.
  • Reduce the heat to medium-low, add the chicken broth mixture. Whisk scraping up any bits stuck to the pan then simmer 2 minutes to reduce slightly.
  • Return the chicken to the skillet, top each piece with a slice of ham and a slice of swiss, cover the skillet and simmer medium-low for 3 to 4 minutes until the cheese melts.
  • To serve use a spatula and transfer the chicken to each dish, spoon the remaining sauce over each piece.

Categories     Chicken Breast

Time 35m

Yield 4 serving(s)

Number Of Ingredients 7

4 (4 ounce) chicken breasts, boneless, skinless, not too thick
8 slices swiss cheese (or whatever you like but it should be 2 per breast)
4 slices ham, I used Virginia, use whatever type makes you happy
1 egg
1/4 cup breadcrumbs, I use unseasoned
1/2 teaspoon seasoning salt, I usually eyeball it
1 teaspoon butter, melted, optional (I think it will make the coating less dry)

Steps:

  • Preheat oven to 350. Line a baking sheet with a silicon liner or whatever you like to use.
  • Rinse and pat dry breasts. Layout breast, 1 slice of cheese, 1 slice of ham, then roll from larger end towards pointy end and close with one toothpick. Set aside until all chicken is done up to this point.
  • In a small dish or bowl, slightly beat an egg and set aside.
  • In another small dish or bowl, mix together breadcrumbs, seasoned salt and butter.
  • Dip rolled up chicken in egg, then breadcrumb mixture and place on baking sheet - repeat with rest of chicken.
  • Lay one slice of cheese over each coated chicken breast.
  • Bake approx 20 min, use a thermometer to measure internal temp to be safe.

Tips:

  • To save time, use pre-cooked or rotisserie chicken. It's a great way to get a flavorful and juicy chicken breast without having to cook it from scratch.
  • If you don't have a meat mallet, you can use a rolling pin or even a heavy skillet to pound the chicken breasts thin. Just be careful not to pound them too thin, or they will become tough.
  • Make sure to season the chicken breasts well before cooking them. This will help to enhance the flavor of the dish.
  • To prevent the cheese from leaking out, be sure to seal the edges of the chicken breasts well before cooking them.
  • If you are using a baking dish, make sure to grease it well to prevent the chicken breasts from sticking.
  • To ensure that the chicken is cooked through, use a meat thermometer to check that it has reached an internal temperature of 165 degrees Fahrenheit.
  • For a crispy coating, fry the chicken breasts in a pan with hot oil until they are golden brown.
  • Serve the chicken cordon bleu with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple green salad.
