CREAMED SPINACH WITH JALAPENOS
I made this last night and my husband said "WOW"! Not the reaction I expected from a spinach dish. We had left-overs today - still a "WOW". Use the jalapenos to your personal taste. If you're worried about the heat, seed and deveine them.

Tips:
- Choose fresh, tender spinach: Wilted or yellowed spinach will not taste as good and will not have the same nutritional value.
- Wash the spinach thoroughly: Rinse the spinach in cold water several times to remove any dirt or grit.
- Cook the spinach until it is just wilted: Overcooked spinach will be mushy and lose its flavor.
- Use a good quality cheese: The cheese should be flavorful and creamy, such as Parmesan, Gruyère, or fontina.
- Add some heat with jalapeño peppers: The jalapeños add a nice spicy kick to the dish. If you don't like spicy food, you can omit them or use a milder pepper, such as a bell pepper.
- Serve the creamed spinach immediately: This dish is best served hot and fresh.
