Time P1DT40m

Yield 12

Number Of Ingredients 14

¾ cup orange juice
½ cup lemon juice
⅓ cup lime juice
4 cloves garlic, minced
½ cup soy sauce
1 teaspoon finely chopped canned chipotle pepper
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1 teaspoon dried oregano
1 tablespoon black pepper
1 bunch fresh cilantro, chopped
½ cup olive oil
3 pounds flank steak

Steps:

  • Combine the orange, lemon, and lime juice in a large glass or ceramic bowl along with the garlic, soy sauce, chipotle pepper, chili power, ground cumin, paprika, dried oregano, black pepper, and cilantro. Slowly whisk in the olive oil until marinade is well combined. Remove one cup of the marinade and place in a small bowl, cover with plastic wrap and refrigerate for use after the meat is cooked.
  • Place the flank steak between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the steak with the smooth side of a meat mallet to a thickness of 1/4 inch. After pounding, poke steak all over with a fork. Add the meat to the marinade in the large bowl, cover, and allow to marinate in the refrigerator for 24 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the steak from the marinade and grill to desired doneness, about 5 minutes per side for medium rare. Discard used marinade. Remove meat from heat and slice across the grain.
  • Pour the one cup of reserved, unused marinade over the hot meat and serve immediately.

ITALIAN MARINADE

Italian Marinade image

Spiedies, grilled skewers of meat marinated in what amounts to Italian dressing, are a culinary mainstay of bars and roadhouses in and around Binghamton, N.Y. What follows is a recipe for the marinade used to prepare them for the fire. I have used fresh herbs, though dried ones are more traditional, and have upped the flavor slightly with the use of lemon zest. Once you've got the marinade made, simply cut the meat - chicken or beef, lamb or pork - into 1- or 2-inch cubes, and submerge it in the liquid for a couple of days (10 to 12 hours for chicken), covered, in the refrigerator. All that lemon and vinegar does some work on the meat, and the result, when grilled over charcoal for four or five minutes a side, is a fantastical taste of upstate New York, and a very simple and excellent dinner besides. (Here are instructions for cooking them.) Serve with torn mint and an additional drizzle of lemon juice and olive oil, on top of Italian bread or alongside rice.

Tips:

  • Choose the right cut of meat. For best results, use a flank steak, skirt steak, or hanger steak. These cuts are thin and flavorful, and they will cook quickly in the marinade.
  • Use a flavorful marinade. The marinade is what will give your Latin-style grilled meat its delicious flavor. Be sure to use a marinade that is packed with flavor, such as the one in this recipe. You can also add your own spices and herbs to the marinade to create a unique flavor profile.
  • Marinate the meat for at least 30 minutes. The longer you marinate the meat, the more time it will have to absorb the flavors of the marinade. However, you can also marinate the meat for up to 24 hours if you want a really flavorful result.
  • Grill the meat over medium-high heat. This will help to sear the meat and lock in its juices. Be sure to grill the meat for just a few minutes per side, or until it is cooked to your desired doneness.
  • Serve the grilled meat with your favorite sides. Some popular sides for Latin-style grilled meat include rice, beans, and vegetables. You can also serve the meat with a flavorful sauce, such as chimichurri or salsa verde.

Conclusion:

Latin-style grilled meat is a delicious and easy-to-make meal that is perfect for any occasion. By following these tips, you can create a flavorful and juicy grilled meat that will be sure to impress your friends and family. So fire up your grill and get cooking!
