1 teaspoon crushed ginger
1 teaspoon crushed garlic
1/4 cup cashews
2 teaspoons lemongrass, finely chopped
2 onions, cut into quarters
3 tablespoons olive oil
1 small red chili pepper, thinly chopped
2 tablespoons curry powder
2 1/2 cups cubed firm tofu
2 cups coconut milk
4 cups water
2 cups potatoes, cubed
2 teaspoons salt
1 tablespoon white sugar

Steps:

  • Mix the garlic with ginger, onions, vinegar, curry, chilli and lemon grass and grind into a rough paste.
  • Heat the oil in a wok and add the olive oil until hot then mix in the ground paste.
  • Drop the heat to a simmer and add the coconut milk and water.
  • Add the potatoes and cook for about 15 minutes before adding the tofu.
  • Cook for another 15 minutes or until the potato is tender and season with sugar and salt.

3 cloves garlic, minced

1 jalapeño, diced
1 medium sweet potato, diced into 1 inch cubes
½ head of cauliflower, cut into small florets (about 2-3 cups)
1 bell yellow or orange pepper, diced
2 carrots, thinly diced or chopped
2 tablespoons curry powder
½ teaspoon turmeric
½ teaspoon cumin
⅛ teaspoon ground cinnamon
½ teaspoon salt
1 (15 oz) can lite coconut milk
1/2 cup tomato sauce
½ cup vegetarian broth
¼ cup roasted cashews, ground
1 package firm or extra firm Nasoya tofu, cubed
To garnish: Cilantro and extra cashews

Steps:

14 ounces coconut milk
8 ounces chicken stock (or bullion, I use "Better than Bullion')
2 tablespoons curry powder
1 large onion, chopped
1 tablespoon cooking oil
1 lb extra firm tofu, cubed

Steps:

  • Heat the oil in a large pan or wok.
  • Sweat the onion and brown the chicken add the tofu and brown a little (for that crispness that tofu usually lacks).
  • In a bowl mix curry into coconut milk and add chicken stock.
  • Pour liquids over meat mixture.

  • Take care not to boil because this will cause the tofu to disintegrate.

1 pound firm tofu, cut into 3/4 inch cubes
4 roma (plum) tomatoes, chopped
1 yellow bell pepper, thinly sliced
4 ounces fresh mushrooms, chopped

4 cups chopped bok choy
salt to taste

Steps:

  • Remove white parts of green onions, and finely chop. Chop greens into 2 inch pieces.
