Categories     dessert     main dish

Time 4h10m

Yield 10 servings

Number Of Ingredients 10

1 whole pie crust, baked and cooled (or can use Oreo or graham cracker crust)
1 1/2 c. sugar
1/4 c. cornstarch
1/4 tsp. salt
3 c. whole milk
4 whole egg yolks
6 1/2 oz. weight bittersweet chocolate, chopped finely
2 tsp. vanilla extract
2 tbsp. butter
Whipped cream, for serving

Steps:

  • Combine the sugar, cornstarch, and salt in a medium saucepan. Stir or whisk together.
  • Pour in milk and egg yolks, and whisk together.
  • Stir over medium heat until the mixture just barely comes to a boil and becomes thick, about 6-8 minutes (maybe less, maybe more; just watch it!) The second it starts to bubble and thicken (note: It should be thick like pudding!) remove it from the heat. Add the chocolate, vanilla, and butter, and stir until everything is beautifully combined.
  • Pour the pudding into the pie crust (if there is extra, spoon it into small dishes) and place in the fridge to chill for 4 hours uncovered.
  • Cut into slices and serve with whipped cream!

Time 4h35m

Yield 4 small pies

Number Of Ingredients 11

24 chocolate sandwich cookies
5 tablespoons salted butter, melted
1 1/2 cups sugar
1/4 cup cornstarch
1/4 teaspoon kosher salt
3 cups whole milk
4 large egg yolks
6 1/2 ounces bittersweet chocolate, chopped finely
2 tablespoons salted butter
2 teaspoons vanilla extract
Whipped cream, for serving

Steps:

  • For the crust: Preheat the oven to 350 degrees F.
  • Pulse the cookies in a food processor until finely chopped. With the processor running, add the butter. Press the crumbs into the bottoms of four 4 1/4-inch disposable aluminum pie pans. Bake until set, about 5 minutes. Let cool.
  • For the filling: Whisk together the sugar, cornstarch and salt in a medium saucepan. Whisk in the milk and egg yolks. Stir over medium heat until the mixture just barely comes to a boil and becomes thick, 6 to 8 minutes. The second it starts to bubble and thicken (it should be thick like pudding), remove it from the heat. Add the chocolate, butter and vanilla, then stir until everything is beautifully combined. Pour the pudding into the pie crusts and place in the fridge, uncovered, to chill for 4 hours. Serve topped with whipped cream.

Tips:

  • Use high-quality chocolate for the best flavor. A semisweet or bittersweet chocolate with a cocoa content of at least 50% is recommended.
  • Be sure to melt the chocolate and butter over low heat, stirring constantly, to prevent scorching.
  • Allow the chocolate mixture to cool slightly before adding the eggs, to prevent the eggs from scrambling.
  • Beat the egg whites until stiff peaks form before folding them into the chocolate mixture. This will help to create a light and fluffy filling.
  • Bake the pie until the center is just set. Overbaking will result in a dry and crumbly pie.
  • Serve the pie chilled or at room temperature. Top with whipped cream, ice cream, or fresh berries for an extra special treat.

Conclusion:

Ladd's Chocolate Pie is a classic dessert that is perfect for any occasion. With its rich and decadent chocolate filling and flaky crust, it is sure to be a hit with everyone who tries it. Follow these tips to make the best Ladd's Chocolate Pie possible.
