Number Of Ingredients 5

1 shortbread or graham cracker crust
1-8 oz Cool Whip whipped topping
2/3 c pureed Kumquats
1 can sweetened condensed milk
1/2 c lemon juice

Steps:

  • Beat condensed milk and whipped topping. Add the lemon juice and beat until thickened. Add pureed kumquats, pour into shell and chill in refrigerator for several hours. To make puree: Wash the kumquats, cut in half and remove seeds. Place in a blender and puree. Do not cook. You can freeze the puree in Ziploc bags. Defrost the puree before using and drain the excess liquid. You can freeze the puree for six months.

Tips:

  • Selecting Kumquats: Choose firm, plump kumquats with a deep orange color. Avoid any with blemishes or soft spots.
  • Preparing Kumquats: Before using, rinse the kumquats thoroughly and remove any stems or seeds. If desired, you can also peel the kumquats, though this is not necessary.
  • Zesting Kumquats: To get the most flavor from your kumquats, zest them before using. Use a fine grater to remove only the outer orange peel, avoiding the white pith.
  • Cooking Kumquats: Kumquats can be used in a variety of dishes, both sweet and savory. They can be roasted, grilled, sautéed, or added to pies, tarts, and other desserts.
  • Storing Kumquats: Fresh kumquats can be stored in the refrigerator for up to two weeks. They can also be frozen for up to six months.

Conclusion:

Kumquats are a versatile and delicious fruit that can be enjoyed in a variety of ways. Their unique flavor and aroma make them a perfect addition to both sweet and savory dishes. Whether you're looking for a refreshing snack, a flavorful ingredient for your next recipe, or a beautiful garnish for your favorite dessert, kumquats are sure to please.
