3 tablespoons soy sauce
1 teaspoon sugar
1/8 teaspoon dried red pepper flakes
1/2 cup canned chicken broth or 1/2 cup homemade stock
4 tuna steaks, about 1 ",thick
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
2 tablespoons cooking oil
1 teaspoon sesame oil
1 green onion, including green top chopped
3 cloves garlic, minced

Steps:

Time 1h5m

Yield 4 servings

Number Of Ingredients 16

2 cups shredded Napa cabbage
1 cup shredded red cabbage
1 cup green beans, trimmed and thinly sliced lengthwise
1/2 cup thinly sliced red bell pepper
1/4 cup chopped pickled ginger
1/4 cup coarsely chopped fresh cilantro leaves
1/2 cup canola oil
6 square wonton sheets, cut into 1/8-inch wide strips
2 tablespoons ginger, chopped
2 tablespoons green onion, chopped
2 cloves garlic, minced
1 tablespoon freshly chopped cilantro leaves
1 pound sashimi-grade ahi tuna
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1/4 cup sesame seeds

Steps:

  • In a large bowl, combine the cabbages, green beans, red bell pepper, pickled ginger, and cilantro. Cover and refrigerate.
  • In a small saucepan heat the canola oil to 325 degrees F and carefully fry the wonton strips for 3 to 4 seconds, until golden brown. Using a slotted spoon, transfer the strips to a paper towel to drain. Set aside.
  • For the dressing:
  • In a blender or food processor, blend together the ginger, green onion, garlic, and cilantro.
  • For the Tuna:
  • Coat the tuna with the oil and season with the salt and pepper. On a plate scatter the sesame seeds and press the tuna into the seeds on both sides, gently shaking off the excess.
  • Heat a large grill or saute pan over high heat and sear the tuna for 3 minutes on each side. Remove the fish from the pan and let rest for several minutes before slicing. The tuna will be medium-rare.
  • Toss the vegetables with half of the dressing and mix well. Add half of the wonton strips and gently combine. Mound the slaw onto a platter or indivisual plates. Place the sliced tuna on top of the salad and drizzle the remaining dressing on top. Garnish with the remaining wonton strips.

TUNA GRILLED KOREAN-STYLE

Tuna Grilled Korean-Style image

This aromatic marinade is used to flavor and tenderize beef in Korean cuisine. Do not marinate this longer than two hours, as the enzymes in ginger can over-tenderize the fish.

Time 6m

Yield Serves 4

Number Of Ingredients 9

1/2 cup light soy sauce
2 tablespoons toasted sesame seed oil
1 teaspoon minced fresh ginger root
3 tablespoons sugar
1 tablespoon sesame seeds
3 garlic cloves, minced
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 pounds tuna steak (1 inch or thicker), cut into 4 portions

  • Brush the grill with vegetable oil. Discard the marinade and grill the tuna (or broil it on a rack set in a baking pan) for 3 minutes on each side until medium rare.
  • Serve immediately.

Tips

  • For the freshest tuna, visit a reputable fish market or ask your local fishmonger to recommend the best quality tuna available.
  • When selecting tuna for searing, choose a steak that is at least 1 inch thick. This will ensure that the tuna remains moist and juicy during cooking.
  • If you are using frozen tuna, thaw it overnight in the refrigerator. Do not thaw tuna in the microwave, as this can cause the fish to cook unevenly.
  • Before searing the tuna, pat it dry with paper towels. This will help to prevent the fish from sticking to the pan.
  • Season the tuna with salt and pepper, or your favorite herbs and spices, prior to searing. This will help to enhance the flavor of the fish.
  • Sear the tuna over high heat for a short period of time, about 2-3 minutes per side for medium-rare. This will create a nice crust on the outside while keeping the inside of the fish moist and tender.
  • Let the tuna rest for a few minutes before slicing and serving. This will allow the juices to redistribute throughout the fish, resulting in a more flavorful and evenly cooked dish.

Conclusion

Korean-style seared tuna is a delicious and versatile dish that can be enjoyed for lunch, dinner, or as an appetizer.
