This is a delicious tomato based rice dish, spicy pork sausage meat may be replaced for the ground beef which is what I prefer to use, make this as spicy as you like by adjusting the chili flakes, the olives may be omitted I strongly suggest to add them in you could substitute 3/4 cup frozen peas, this recipe was developed using converted rice I can't promise the same results using another kind of rice

Yield 6-8 serving(s)

Number Of Ingredients 13

2 -3 tablespoons oil
1 1/2 lbs ground beef
1 medium onion, chopped (can use 2 onions)
1 green bell pepper, seeded and chopped
4 garlic cloves, minced (don't skimp on the garlic add in more if desired)
1 teaspoon crushed red pepper flakes
1 (1 1/4 ounce) package taco seasoning mix
1 1/2 cups chicken broth (can use water or half each, all chicken broth is better to use)
1 (28 ounce) can diced tomatoes, undrained (no substitutes, crushed will not work)
1 cup uncooked converted long grain white rice (such as Uncle Ben's converted rice)
1 teaspoon seasoning salt (or to taste, can use white salt)
1/2 teaspoon fresh ground black pepper (to taste)
1/2 cup sliced green olives

Steps:

  • Heat the oil in a Dutch oven over medium-high heat; add in ground beef with onion, bell pepper, garlic and chili flakes until no longer pink; drain fat, then continue cooking until the meat is browned (this may take 10-12 minutes, the beef must be browned!).
  • Mix in the taco seasoning mix until combined.
  • Add in all remaining ingredients including the juice from the canned tomatoes; bring to a boil over medium heat stirring constantly.
  • Reduce heat to low cover and simmer for about 30-35 minutes or until the rice is tender.

A long time family favorite! --- you can substitute the broccoli florets for one 6-ounce package frozen pea pods if desired --- make certain the the cooked ground beef is very well browned and well drained, also make certain to use only *cold* cooked rice, cooking time does not include cooking the rice --- you will love this! :)

Mexican Beef and Rice Casserole image

This Mexican casserole with beef and rice is a super easy recipe for family dinner. Garnish with your favorite toppings. I like to top with shredded lettuce and chopped cilantro! More shredded cheese is always good, too.

Tips:

  • Use high-quality ground beef for the best flavor. Look for ground beef that is at least 80% lean.
  • Season the ground beef well with salt, pepper, and garlic powder. You can also add other spices to taste, such as chili powder, cumin, or paprika.
  • Cook the ground beef over medium heat until it is browned all the way through. This will help to develop the flavor and prevent the ground beef from becoming dry.
  • Use a long-grain rice for this recipe. Long-grain rice will stay separate and fluffy, even after it is cooked.
  • Rinse the rice well before cooking. This will help to remove any starch from the rice, which can make it gummy.
  • Cook the rice according to the package directions. Be sure to use the correct amount of water, as too much or too little water can make the rice mushy or dry.
  • Once the rice is cooked, fluff it with a fork before serving. This will help to separate the grains and make the rice light and airy.
  • Serve the Mexican ground beef and rice with your favorite toppings. Some popular toppings include salsa, sour cream, guacamole, and shredded cheese.

Conclusion:

This easy Mexican ground beef and rice recipe is a delicious and versatile dish that can be served for breakfast, lunch, or dinner. It is also a great option for meal prep, as it can be made ahead of time and reheated when you are ready to eat. With its simple ingredients and flavorful taste, this recipe is sure to become a family favorite.
