This should yield about 3 cups gravy, if you don't use it all you can freeze it, use a good-quality chicken broth for this

1/4 cup butter
1/4 cup flour
2 (10 ounce) cans chicken broth, undiluted
1 tablespoon oxo chicken bouillon powder (I just use 1 small package OXO bouillon powder)
1 cup milk
1 pinch garlic powder (optional)
1 -2 teaspoon dried onion flakes (rubbed between fingers to release the flavors)
black pepper (lots black pepper!)

Steps:

  • In a heavy saucepan melt butter over medium-high heat.
  • Whisk in flour and stir constantly for 1 minute (do not let the flour brown).
  • Slowly add in broth, chicken bouillon powder, half and half or milk, pinch garlic powder (if using) and dryed onions; stir/whisk over medium heat until smooth and thickened (this should take about 2-3 minutes).
  • Add in lots black pepper and salt if desired.

1/4 c drippings from chicken
1/4 c all purpose flour
1 1/2 c milk
salt & pepper to taste

Steps:

  • 1. When chicken is done, remove from pan and set aside; keep warm while making gravy.
  • 2. Remove all but 1/4 cup drippings from pan. Loosen any crusty bits with a heavy spoon or spatula. Over medium-high heat, stir in 1/4 cup flour and mix with drippings, using a wire whisk.
  • 3. When thoroughly blended and turned a beige color, gradually begin to add the milk a little at a time, stirring constantly with the whisk. Keep stirring after all the milk has been added, until mixture begins to thicken. When it begins to bubble, turn heat to low and continue cooking for about 2 minutes. Add salt and pepper to taste. Serve with mashed potatoes and fried chicken.

⅓ red onion, finely chopped
2 cloves garlic, minced, or to taste
1 dash ground thyme

⅓ cup white wine
1 (16 ounce) can chicken broth

¼ cup cold water
¼ cup all-purpose flour

Steps:

If you want a dark richer gravy then omit the water and use 1 cup consomme. This is delicious served with a pork roast and mashed taters or over fries, do not add in any extra salt until end of cooking :)

2 -3 large onions, thinly sliced
2 teaspoons sugar
1/3 cup butter
6 tablespoons flour
1/4 cup water
1 cup canned beef broth, undiluted (low-sodium is okay)
3/4 cup canned consomme, undiluted
2 -3 tablespoons Worcestershire sauce
black pepper (lots of pepper!)
salt (optional)

Steps:

  • In a large skillet heat the butter over medium heat, add in sliced onions with sugar; saute for about 20-22 minutes or until the onions are softened and lightly browned.

This is comfort food at it's best, it makes a wonderful meal served with mashed potatoes or fries or cooked egg noodles, I make this often it is a family favorite --- you will need a very large skillet for this and if you can fit more chicken in your skillet then go ahead, I make this using boneless skinless breasts but any part of the chicken will work well although you may need to adjust the cooking time slightly --- make certain to hand-squeeze out all the excess moisture from the chicken or it will create a watery gravy --- no extra salt needed to this dish as the canned soups, Parmesan cheese and dry onion soup already adds plenty, you can always add it in at the end of cooking if needed, if you wanted to go the extra step, fresh sliced sauteed mushrooms works even better than the canned, I have listed canned for quicker prep --- cooking time is only estimated --- you will love this!

4 -6 boneless skinless chicken breasts (or use as many as you can fit in your skillet)

1 tablespoon fresh minced garlic (can use more)
1/4-1/2 teaspoon crushed red pepper flakes (optional or to taste)
2 (10 1/2 ounce) cans cream of mushroom soup, undiluted
1 tablespoon Worcestershire sauce
1/4 cup grated parmesan cheese
1 (10 ounce) can sliced mushrooms, well drained (or use fresh sliced sauteed mushrooms)
0.5 (2 ounce) package dry onion soup mix
1/4 cup milk (more if desired to thin out the gravy)

2 tablespoons pan drippings (from pork sausages, chicken etc or use bacon fat)
1/4 cup flour
1 teaspoon black pepper (lots of black pepper!)

1/2 cup all-purpose flour
3 tablespoons all-purpose flour

  • Drain the pan drippings for the roasted turkey through a fine strainer.
  • Let sit and then remove any fat from the top of the drippings.
  • Add in chicken broth or water to make 4 cups if necessary.
  • In a medium saucepan, melt margarine or butter.
  • Add in lots of black pepper.
  • Add in 1/2 cup flour plus 3 tablespoons; constantly whisk for about 3 minutes over low heat.
