ALMOST-FAMOUS GUACAMOLE

Almost-Famous Guacamole image

We think we've cracked the code to Chipotle's famous guacamole. The secret--using equal parts fresh lemon and lime juice - adds just enough brightness and tang. If you're feeling fancy, go all out and add a couple tablespoons of diced tomatoes.

Time 15m

Yield 6 servings (about 2 cups)

Number Of Ingredients 7

3 ripe avocados
2 teaspoons fresh lemon juice

  • Mash together the avocado, lemon juice, lime juice and 1 1/2 teaspoons salt in a mixing bowl until creamy. Fold in the cilantro, red onion and jalapeno with a spoon or spatula. Adjust the salt if needed.

Tips:

  • For the freshest guacamole, use ripe avocados. Look for avocados that are firm but yield to gentle pressure when squeezed.
  • To speed up the ripening process, place unripe avocados in a paper bag with an apple or banana. The ethylene gas produced by these fruits will help the avocados ripen more quickly.
  • To prevent browning, add a squeeze of lime or lemon juice to the guacamole. You can also store the guacamole in an airtight container in the refrigerator for up to 2 days.
  • If you're making guacamole ahead of time, mash the avocados and add the other ingredients just before serving. This will help prevent the guacamole from turning brown.
  • Serve guacamole with tortilla chips, pita chips, or vegetable crudités. You can also use it as a topping for tacos, burritos, or quesadillas.
  • For a spicier guacamole, add more jalapeño pepper or cayenne pepper. You can also add a pinch of chili powder or cumin.
  • For a creamier guacamole, add a dollop of sour cream or Greek yogurt.
  • For a chunky guacamole, mash the avocados less vigorously. You can also add chopped tomatoes, onions, or cilantro.
  • For a unique twist, try adding roasted corn, black beans, or mango to your guacamole.

Conclusion:

Guacamole is a delicious and versatile dip that can be enjoyed in many different ways. Whether you're serving it at a party, a potluck, or a casual get-together, guacamole is sure to be a hit. With its fresh, creamy texture and zesty flavor, guacamole is the perfect addition to any Mexican-inspired meal.
