Kfc Macaroni and Cheese image

A favorite among kids and kids at heart is the Colonel's Macaroni and cheese which was originally made fresh daily. Now it comes premade and is cooked in an oven like it originally was when it was made fresh. This was sent to a recipe group, AARestaurant_Recipes, by tabbitha.

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 5

2 cups elbow macaroni
3/4 cup Velveeta cheese
2/3 cup mild yellow cheddar cheese
1/3 cup whole milk
1/4 teaspoon salt

Steps:

  • In a pot bring water to a boil with salt to taste, once the water comes to a boil add the macaroni and cook for 12 to 15 minutes.
  • When the noodles are cooked drain but do not rinse.
  • To make the cheese sauce in a pan over low heat combine the Velveeta cheese, shredded cheddar and the milk.
  • Cook the cheeses till they are melted and then add the salt.
  • Add the noodles and mix through.
  • Place in a casserole dish and bake at 400 degrees for 10 to 15 minutes.
  • You may want to broil the top to make a brown top.

Tips:

  • Use a good quality cheese: The type of cheese you use will make a big difference in the flavor of your mac and cheese. Use a sharp cheddar cheese for a bold flavor, or a milder cheese like Colby or Monterey Jack for a more subtle flavor.
  • Cook the macaroni al dente: Al dente pasta is cooked just until it is tender, but still has a slight bite to it. This will prevent the pasta from becoming mushy when it is mixed with the cheese sauce.
  • Make a roux: A roux is a mixture of butter and flour that is used to thicken the cheese sauce. A roux will help to prevent the cheese sauce from becoming too thin and watery.
  • Use evaporated milk: Evaporated milk is a good choice for making mac and cheese because it is thicker and creamier than regular milk. This will help to give the cheese sauce a rich and velvety texture.
  • Add some spices: A little bit of spice can help to enhance the flavor of the cheese sauce. Try adding a pinch of cayenne pepper, paprika, or garlic powder.
  • Don't overcook the cheese sauce: Overcooked cheese sauce will become thick and rubbery. Cook the cheese sauce just until it is melted and smooth.
