I am an avid collector of recipes. A young lady, a former KFC employee, was looking at my recipes one evening when she discovered this one. She told me that the recipe was close, but that I should remove the vinegar and lemon juice and replace them with tarragon vinegar. Tarragon vinegar is the secret. I copied these ingredients from the KFC coleslaw container years ago. Yes, they did list Miracle Whip, not mayo! It always goes quick, but I never get any compliments when I bring it as a dish to pass because they all think that I just picked it up from KFC and put it in my own bowl! I use the bags of coleslaw mix from the produce section of my store and chop it in the food processor, but you can use a 1 lb head of cabbage, and a couple of carrots instead if you wish.

- ADD the following DRESSING ingredients into a large bowl: 1/2 cup real mayonnaise, 1/2 cup milk, 1/3 cup sugar, 1/4 cup Miracle Whip, 2 teaspoons cider vinegar, 2 teaspoons pineapple juice, 1 teaspoon lemon juice, 1/4 teaspoon coriander powder, 1/4 teaspoon salt (or to taste).
- CUT 1-2 small wedges of white onion, each to the size of a garlic clove; PLACE onion wedge into garlic press; SQUEEZE onion pulp and juice to measure 1 teaspoon; ADD to other ingredients in bowl.
- WHISK together DRESSING ingredients until smooth, creamy and opalescent, using a wire whisk.
- CHOP COLESLAW ingredients to specifications, using a food processor if desired (4 cups cabbage should be cut to approximately 1/4 inch pieces; 1/3 cup carrots should be cut to approximately 1/8 inch thick x 1/4 inch long pieces.
- ADD prepped COLESLAW ingredients into large bowl containing DRESSING.

- Mix 1/4 cup of the divided milk with the vinegar and lemon juice in a glass (I use my glass measuring cup, less dishes). "Stir well" and let sit, "undisturbed", for 5 minutes (this is to create buttermilk).
- Meanwhile, in a large glass or plastic bowl, thoroughly mix (whisk) together the remaining 1/4 cup milk with the Miracle Whip, sugar, salt, pepper, celery seed and dried onion. Now your butter milk should be ready, so mix that in well, also.
- Now for the veggies. You can either put the bag of coleslaw mix into a food processor to dice it up very tiny (like KFC), or leave it shredded the way it is packaged. Your choice.
- Gently stir the slaw mix into the dressing until completely coated. It will look very dry, and you will probably not like it if you eat it right away (over night is the key to this). Cover the glass or plastic bowl tightly with plastic wrap and leave it sit for a full 24 hours. (Really). Stir at least once overnight.
- Next day, remove from the fridge, stir to moisten and serve. Enjoy!

- 1. Toss cabbage lightly with sugar, and carrots. Sprinkle with salt,pepper and drench it all with the milk. Cover and refrigerate it about 15 minutes. While this is chilling combine the mayonnaise, buttermilk.celery seed hot sauce and minced onions. Mix well with cabbage mixture. Refrigerate again at least an hour before serving. "KFC" COLESLAW
Steps:
- Remove the tough outer leaves from the head of cabbage. Cut the head in half and remove the solid core. Cut the halves like you would a tomato, so you're left with six equal sections. Cut each of the sections in half, so you're left with 12 equal sections. Put 3 sections into a blender and fill with water to within a couple of inches from the top. Turn the speed to high and "pulse" the cabbage in short bursts until the pieces are grated to a very small size. Be careful not to grate it too tiny, though. (Each time you pulse, you'll see the pieces getting smaller and smaller in the water.) When you're done grating, pour the contents through a wire strainer (press a small mixing bowl down into the cabbage while holding the strainer so that the water will be forced through). Place the grated cabbage into a large mixing bowl. Repeat the process until all of the cabbage has been grated. Do the same with the carrots, and add to the cabbage. Add the remaining ingredients and mix thoroughly. Refrigerate overnight in a sealed container.
