Cucumber Slaw:
1 cup julienned cucumber
1/2 cup julienned red bell pepper
1/2 cup julienned carrot
2 tablespoons rice vinegar
2 tablespoons freshly-squeezed lime juice

1 tablespoon soy sauce
1/2 teaspoon sesame oil
Key Lime Butter Sauce:
6 ounces white wine
2 shallots, minced
2 bay leaves
4 cups heavy cream
Zest and juice of 2 Key limes
4 tablespoons cornstarch
1/2 cup water
2 sticks cold unsalted butter, cubed
For the Grouper:
Four 7-ounce fresh skinless grouper filets
2 ounces blended oil (half olive oil, half vegetable oil)
Kosher salt and freshly ground black pepper

Steps:

  • For the slaw: Toss together the cucumber, bell pepper, carrot, rice vinegar, lime juice, cilantro, sugar, soy sauce and sesame oil. Refrigerate until ready to serve.
  • For the key lime butter sauce: Bring the wine, shallots and bay leaves to a boil in a medium saucepan over high heat. Once boiling, add the heavy cream and lime zest and juice. Bring back to a boil and cook until reduced by half. Mix the cornstarch and water together and slowly whisk into the reduced cream.
  • Once the mixture thickens turn the heat to low and add the butter a little at a time, whisking each time until fully incorporated. Run through a fine strainer and keep warm until serving.
  • For the grouper: Preheat the oven to 400 degrees F. Heat the oil in a large skillet over medium-high heat until it just begins to smoke. Season the grouper filets with salt and pepper, put in the skillet top-side down and cook until the flesh begins to crisp, about 2 minutes. Do not flip; transfer the skillet to the oven and cook until the grouper flakes easily, 5 to 6 minutes.
  • To serve, spoon some Key Lime Butter Sauce on each of 4 plates and top with a grouper filet browned-side up. Top each filet with some Cucumber Slaw and serve.

1/3 cup white wine vinegar
1/3 cup dry white wine
2 large shallots, very finely chopped
1/2 cup key lime juice (I use Nellie & Joe's Famous Key West Lime Juice)
1/3 cup heavy whipping cream
3/4-1 cup unsalted butter
salt & freshly ground black pepper, to taste

Steps:

  • Reduce the vinegar, wine, keylime juice, shallots, salt and pepper in a saucepan over medium heat until the liquid is nearly evaporated.
  • Add the heavy cream and reduce by half.
  • Cool the mixture to 140°F.
  • Place the saucepan with the reduced mixture over extremely low heat and whisk in the butter tablespoon by tablespoon, whisking vigorously the entire time.
  • Strain the sauce.

But DH wanted me to drizzle a key lime sauce over the pie. So here is a recipe I found that, if desired, goes great with Peacefulnightdove's recipe. This would also be good drizzled over bread pudding, among other things.

3/4 cup panko breadcrumbs
3 tablespoons all-purpose flour
1/4 cup mayonnaise
4 green onions, thinly sliced

1 large egg, lightly beaten
2 teaspoons sriracha sauce
salt and pepper
4 tablespoons unsalted butter
1/4 cup olive oil
1 cup mayonnaise

2 tablespoons Dijon mustard

  • Pick over the crabmeat to remove any shell or cartilage, trying not to break up the chunks too much.
  • In a large bowl, combine all of the ingredients except for the butter and olive oil. Moisten hands with a little water and shape the mixture into eight fat ball-like cakes. 24 scallops (6 per person)
2/3 cup key lime juice (Key lime does make a difference. If you can't get key lime use 1/2 cup regular lime juice, it is not)
1/2 cup orange juice (approximately ... just the juice of 1 orange)
1 teaspoon garlic, minced
4 tablespoons butter (2 tablespoons to saute, 2 to garnish the dish)
1 tablespoon honey
1/2 teaspoon ground ginger
1 pinch red pepper flakes
1 tablespoon fresh cilantro, chopped fine
salt
pepper
1 teaspoon olive oil
1 (14 ounce) box jasmine rice
vegetable broth (to cook the rice in)
1 approximately ... just the orange, zest of
2 scallions chopped white and greens
1 teaspoon butter
salt
pepper

Steps:

  • Scallops -- Now before you start anything, just take out the scallops from the fridge, rinse well and pat dry. Then season well with salt and pepper and set to the side so they get to room temperature You don't want to sear cold scallops.
  • Rice -- Now even though it is quick cooking, the scallops take such little time we need to start the rice first. Now I happen to use the quick cooking, but you can use any Jasmine brand, quick cooking or not that you want. Just follow the directions for cooking the rice. But these are my changes. For the liquid, I use vegetable broth instead of water and I replace some of the broth with the juice of 1 orange, however much that will be depends on the size of the orange. Just make sure if it calls for 3 cups of liquid, use the orange juice and the rest should be the vegetable broth. This will just really help to flavor the rice as it cooks. I also add the zest of 1entire orange to the liquid as the rice cooks. Just cover and let cook as you sear the scallops.
  • Scallops -- As the rice cooks, time to make the scallops. In a cast iron if you have one or a stainless pan (NO NON STICK) for this dish heat up 2 tablespoons of the the butter and 1 teaspoon olive oil to medium high heat and sear the scallops. Once you place them in the pan DO NOT move. They take about 2-3 minutes per side and when you can easily lift them, then it is time to turn. They don't take long and don't over cook. When they become opaque and firm to the touch they are done. They will also continue to cook once removed. They should be golden brown per side. Once done, remove to a plate and cover with foil.
  • Rice -- Now the rice should be done. Add the scallions, butter, salt and pepper to taste if you want. Cover and set to the side. It is all done.
  • Key Lime Sauce -- Now in the pan where you seared the scallops, add the garlic and saute just a minute. Then add the orange juice, key lime juice, honey, ginger, red pepper flakes and reduce on medium for 3-4 minutes to reduce. Then add in the cilantro, salt and pepper if needed and butter to glisten the sauce.
  • Serve -- Serve the orange rice and top with 6 of the scallops per person and top with the key lime sauce. I love to garnish this with a lime and orange slice to let those know what is in the dish.

2 cups boiling water
1 cup Key lime juice

45 graham cracker squares
2 tablespoons Key lime juice
2 tablespoons water
1 (18-oz.) jar (1 1/2 cups) seedless raspberry jam

Grated lime peel or fresh mint leaves

Steps:

  • In very large bowl, combine gelatin and boiling water; stir 2 to 3 minutes or until dissolved. Add 1 cup lime juice and the sweetened condensed milk; beat with electric mixer on medium speed until smooth. Set aside.
  • In medium bowl, beat whipping cream until stiff peaks form. Gently fold whipped cream into gelatin mixture just until combined.
  • Grease 13x9-inch pan. Arrange 5 cracker squares down length of greased pan; repeat forming 2 additional rows and using a total of 15 cracker squares to cover bottom of pan. Set aside.
  • In small bowl, combine 2 tablespoons lime juice and 2 tablespoons water. Brush juice mixture onto each cracker square in pan just until moistened. 3 tablespoons water
2 tablespoons sugar

Accompaniment: steamed rice

Steps:

  • Preheat broiler.
  • Pat steak dry and season with 1 teaspoon salt and 1/2 teaspoon pepper. Broil on a broiler pan 4 to 6 inches from heat, turning once, about 6 minutes total for medium-rare. Transfer steak to a cutting board and let rest 5 minutes before slicing.

5 tablespoons unsalted butter, cut into pieces and softened
1/2 cup granulated sugar
2 tablespoons firmly packed light brown sugar
1 tablespoon milk
four 3 1/2- to 4-inch-long cannoli forms (each about 5/8 inch in diameter)
For filling
4 ounces cream cheese, softened
1/3 cup granulated sugar
2 teaspoons freshly grated lime zest
4 tablespoons bottled Key lime juice or 5 tablespoons fresh lime juice
1 cup mascarpone cheese (about 1/2 pound)
Mango Sauce
Accompaniments: fresh raspberries
sliced carambola (star fruit) if desired

Steps:

  • Make "cannoli" shells:
  • Preheat oven to 350°F. and lightly grease a heavy baking sheet.
  • Arrange 4 parchment squares on baking sheet. (Oil or butter makes parchment squares stick to baking sheet).
  • In a food processor blend together coconut and flour until coconut is ground fine. Add butter, sugars, and milk and blend until dough forms a ball, about 10 seconds. Spoon a well-rounded teaspoon of dough onto each of the 4 parchment squares and with slightly wet fingertips evenly pat into 2 inch rounds.
  • Bake cookies in middle of oven until very thin and golden brown, about 10 minutes. Immediately transfer cookies (still on parchment) to a rack and let stand until just firm enough to hold their shape, 30 to 45 seconds. Working with 1 cookie at a time and using parchment as an aid, quickly roll cookie around a cannoli form to make a cylinder. (If cookies become too firm to roll, return them on parchment on baking sheet to oven 1 minute to soften.) Cool formed cookies or a rack before removing cannoli form. Make more cookies in same manner with remaining dough, baking and forming cookies in batches of 4 and allowing baking sheet to cool completely between each batch. Cookies are fragile. Cookies keep in one layer in an airtight container at room temperature 4 days.
  • Make filling:
  • In a bowl with an electric mixer beat cream cheese with sugar, zest, and lime juice until smooth and beat in mascarpone. Chill filling, covered, until firm, at least 4 hours and up to 1 day.
  • Assemble dessert:
  • Whisk filling and transfer it to a pastry bag fitted with a 1/4-inch plain or decorative tip. Carefully pipe filling into both ends of 12 cookies. Pour about 1/4 cup mango sauce onto each of 6 dessert plates, tilting plate to distribute sauce evenly, and top with 2 "cannoli," raspberries, and carambola slices.

Tips:

  • Use fresh key limes for the best flavor. If you can't find key limes, you can substitute regular limes, but the flavor will be slightly different.
