⅔ cup Lime Juice

Steps:

  • Prepare your pie crust as directed and allow it to cool. Preheat your oven to 350
  • In a mixing bowl of a stand mixer fitted with the whisk attachment, beat together the egg yolks with the lime zest until the color becomes light and the texture is fluffy (about five minutes on a low to medium speed). 1/4 c water
1 pkg sugar free lime jello
1 pkg cream cheese (softened)
1 tsp lime juice
8 oz tub of frozen sugar free, or lite cool whip or whipped topping (thawed)
1 graham cracker pie crust

Steps:

  • 1. Microwave water on high for 45 seconds to 1 1/2 minutes, or until boiling. Whisk in gelatin until dissolved.
  • 2. In large bowl mix gelatin mixture, cream cheese, and lime juice.

½ teaspoon coconut extract
½ cup heavy cream
2 (1 gram) packets Splenda® no calorie sweetener
1 (.6 ounce) package sugar-free lime-flavor Jell-O®
⅓ cup boiling water
⅓ cup cold water
2 (8 ounce) packages cream cheese, cut into pieces and softened
½ teaspoon coconut extract
2 tablespoons ground pecans

Steps:

  • In a medium bowl, mix together 1 cup ground pecans, butter, 2 packets sweetener, and 1/2 teaspoon coconut extract. Press firmly into bottom and up sides of an 8 inch pie plate; refrigerate until firm.
  • In a small bowl, whip the heavy cream with 2 packets sweetener until soft peaks form. Set aside.
  • In a large bowl with high sides, mix the gelatin with boiling water until all the gelatin has dissolved. Then stir in the cold water. With an electric mixer, slowly beat in the cream cheese. After all cream cheese is added, stir in remaining 1/2 teaspoon coconut extract, and beat at high speed until smooth. Carefully fold in the whipped cream. Use a spatula to scrape mixture into the pie pan and spread around. Sprinkle remaining 2 tablespoons ground nuts on top. Refrigerate several hours or overnight to allow gelatin to set thoroughly.

2 cups sugar-free shortbread cookies
2 tablespoons light butter, melted
1/4 ounce unflavored gelatin
1 1/4 cups skim milk, at room temperature
4 ounces light non-fat vanilla yogurt, at room temperature
8 ounces reduced-fat cream cheese, at room temperature
1/2 cup lime juice
1 tablespoon lime zest
1/4 cup Splenda granular
1/2 cup whipping cream
1 teaspoon Splenda granular

Steps:

  • Use a food processor to turn cookies into crumbs. Combine crumbs with melted butter and press mixture into the botom of a pie plate.
