Brush a spiral ham with a sweet and tangy apricot glaze, and serve it with a quick sauce made from pan drippings.

Provided by Food Network Kitchen

Time 1h45m

Yield 8-10

Number Of Ingredients 14

One 4- to 5-pound spiral-cut ham
1 large onion, quartered, root end intact
3/4 cup apricot preserves
3 tablespoons yellow mustard
2 teaspoons molasses
1/2 teaspoon Worcestershire sauce
1/4 teaspoon ground allspice
Pinch of ground cloves
8 sprigs fresh thyme, stripped
4 tablespoons cider vinegar
1 1/2 cups low-sodium chicken broth
1 tablespoon unsalted butter, at room temperature
1 tablespoon all-purpose flour
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet or large roasting pan with foil.
  • Put the ham cut-side down on the foil and scatter the onion pieces around it. Cover the ham loosely with foil and bake for 30 minutes.
  • Meanwhile, whisk together the apricot preserves, mustard, molasses, Worcestershire, allspice, cloves, thyme leaves, 3 tablespoons of the vinegar and 1/4 cup water in a small saucepan. Cook, whisking, over medium heat until the preserves dissolve and the glaze is smooth, about 4 minutes.
  • After 30 minutes, remove the foil from the ham and continue to bake, brushing the ham with the glaze every 15 minutes until nicely glazed and heated through, about 1 hour more. Transfer the ham to a serving platter, tent with foil and set aside while making the sauce.
  • Pour the pan juices into a medium skillet. Add the broth and bring to a boil over high heat. Mix the butter and flour together in a small bowl until you form a paste. Whisk the paste into the pan juices and let the sauce simmer until thickened like gravy. Finish with the remaining 1 tablespoon vinegar and season with salt and pepper. Serve the ham with the sauce.

KAHLUA SPIRAL GLAZED HAM

KAHLUA SPIRAL GLAZED HAM image

I wanted to make a different glaze for our Hormel 81 Cure Ham this year, and went to the Kahlua web site and found this recipe. There was a bit of descrepancy in the recipe, in that I had never used STONED GROUND MUSTARD POWDER before, so I chose to used STONE GROUND MUSTARD PASTE IN THE JAR. DON'T KNOW IF THAT WAS THE INTENT OF...

Time 1h45m

Number Of Ingredients 5

9 lb spiral ham ( mine was hormel 81 cure) original called for 6 lb. ham
1/2 c kahlua
1/2 c stone ground mustard
1/2 c brown sugar ( i used light brown sugar)
1 c water

Steps:

  • 1. FOLLOW DIRECTIONS CALLED FOR ON HAM PACKAGE TO MAKE HAM. My recipe said to remove disc over bone. Place ham FACE DOWN in pan large enough with a 2-3 inch side. Add 1 cup of water. Then cover ham tightly with aluminum foil, or a tight fitting lid. Bake in preheated 325 degrees F. oven at 15 minutes per pound, or until ham is warm. I baked mine for 2 hours, and then added the glaze during the last 15 minutes of cooking time.
  • 2. Please NOTE I AM GIVING YOU THE DIRECTIONS I USED TO MAKE AND GLAZE THE HAM, NOT THE ONES IN THE ORIGINAL RECIPE.
  • 3. Add equal portions of brown Sugar, Kahlua, & Stone Ground Mustard, in a medium sauce pan. Place over medium high heat, and then bring to a boil.
  • 4. Cook glaze until it begins to simmer and becomes thick & syrupy. Mine took about 5 minutes
  • 5. Remove ham from oven and brush glaze over ham, and into all the nooks and crannies, then return ham to oven for about 10 minutes till glaze adheres to ham.
  • 6. Remove from oven, Place on platter, add garnishes if desired, separate slices, and serve with extra glaze, you will definitely get requests for extra, so be prepared. SEE THE SEPERATED SLICES IN PROFILE PICTURE ABOVE.

GLAZED SPIRAL-SLICED HAM

Glazed Spiral-Sliced Ham image

In my mind, few foods in a holiday spread are as tempting as a big, spiral-cut ham. I always hope for leftovers so we can have ham sandwiches in the following days. -Edie DeSpain, Logan, Utah

Time 1h45m

Yield 12 servings.

Number Of Ingredients 5

1 spiral-sliced fully cooked bone-in ham (7 to 9 pounds)
1/2 cup pineapple preserves
1/2 cup seedless raspberry jam
1/4 cup packed brown sugar
1/4 teaspoon ground cloves

Steps:

  • Preheat oven to 300°. Place ham directly on roasting pan, cut side down. Bake, covered, 1-1/4 to 1-3/4 hours., In a bowl, mix remaining ingredients. Spread over ham. Bake, uncovered, 20-30 minutes longer or until a thermometer reads 140° (do not overcook).

Nutrition Facts :

Tips:

  • To ensure the ham is cooked evenly, use a meat thermometer to check the internal temperature, which should reach 140°F (60°C) for a medium-rare ham, 145°F (63°C) for a medium ham, or 150°F (66°C) for a well-done ham.
  • For a more flavorful glaze, add a tablespoon of brown sugar or honey to the Kahlúa mixture.
  • To create a crispy glaze, baste the ham with the Kahlúa mixture every 15-20 minutes during the last 30 minutes of cooking.
  • If you don't have a spiral-cut ham, you can score the top of the ham in a diamond pattern before glazing it.
  • Let the ham rest for 15-20 minutes before carving to allow the juices to redistribute.

Conclusion:

The Kahlúa Spiral Glazed Ham is a delicious and easy-to-make dish that is perfect for any special occasion. The combination of Kahlúa, brown sugar, and spices creates a flavorful and moist ham that is sure to impress your guests. Serve the ham with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad. Enjoy!
