3 garlic cloves, chopped
2 shallots, chopped
3 tablespoons vegetable oil
1 lb French style green bean, cut into 1-inch pieces
3 -5 fresh Thai red chili peppers, halved lengthways & deseeded
3 tablespoons ketjap manis (kecap manis, Indonesian sweet soy sauce)
1 fresh tomato, deseeded and cut into wedges
1 tablespoon fried shallot
salt, to taste

Steps:

  • Put garlic, fresh shallots, and 2 tablespoons water into a mortar and pestle and smash into a smooth paste. Set aside.
  • Heat oil in a wok over medium-low heat. Add paste and cook, stirring, about 8 minutes. Add beans and chiles, stir to combine.
  • Add kecap manis and 1/4 cup water, stir to coat. Increase heat to medium high and stir-fry until beans are barely fork tender, 6-8 minutes.
  • Add tomatoes and cook until just wilted, about 2 minutes. Season with salt to taste and transfer to a large bowl.
  • Let beans rest for about 10 minutes before serving, to allow flavors to intensify. Garnish with generous amount of fried shallots, and serve with festive yellow rice. Enjoy!

1 lb fresh French style green bean
1/4 cup butter
1/2 lemon, juice of
1 tablespoon Dijon mustard
3 tablespoons sliced almonds
3 tablespoons chopped hazelnuts

Steps:

  • Blanch French green beans in pot of boiling salted water for 3 minutes.
  • Drain and put into bowl of ice water. Drain when cool.
  • Melt butter over low heat, add Dijon mustard and blend well. Add lemon juice and let come to a boil.
  • Toast sliced almonds and hazelnuts until golden brown. Pour Dijon sauce over beans and toss. Sprinkle toasted nuts over the top.

2 1/2 cups brown sugar
2 3/4 cups dark soy sauce
3 cloves garlic, mashed
1/2 teaspoon star anise pods
2 slices fresh ginger
1/2 cup water

Steps:

  • Carmelize the sugar in saucepan over low heat, stirring frequently.
  • When the sugar has melted, add the remaining ingredients.
  • Bring to a boil, stirring constantly until the sugar has completely dissolved.
  • Lower heat and cook for 10 minutes more.
  • Removed from heat and allow to cool.
  • Pour into a bottle and store in the fridge.
  • This can be stored for several months.
  • I do not strain it as the flavor improves with time.

3 tablespoons vegetable oil
1 teaspoon sesame oil
1 hot chili pepper, seeded and minced (or more)

1/4 cup onion, cut into small crescents
1/2 cup water

1/2 cup water
1 (10 ounce) jar reduced sodium soy sauce (about 1 1/3 cups)
1 star anise, pod
1 garlic clove, crushed

Steps:

  • Half-fill a large bowl with water and ice cubes and set it beside the stove.
  • Combine sugar and water in a heavy 3-quart saucepan. Bring to a boil over medium-high heat, stirring occasionally to dissolve sugar. Once it starts boiling, cook without stirring until syrup turns amber, 5 to 10 minutes. Immediately set saucepan in ice water for about 30 seconds.
  • Add soy sauce, star anise and garlic to cooled caramel.
  • Return pan to medium-high heat and bring to a simmer, stirring occasionally. Reduce heat to low and simmer for 10 minutes.
