1 large Spanish onions, peeled, halved and thinly sliced
Kosher salt and freshly ground black pepper
4 potato buns, split
2 tablespoons canola oil, plus more for brushing

1 1/2 pounds ground chuck (80 percent lean)
8 slices white American cheese, torn into small pieces
1/4 cup ketchup
2 dill pickles, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F.
  • For the caramelized onions: Heat the oil in a large cast-iron pan over medium heat, add the onions and cook, stirring occasionally, until soft and caramelized, about 10 minutes. 1 to 2 tablespoons canola or vegetable oil
4 potato rolls or soft hamburger buns, split

Steps:

  • In a small bowl, stir together 2 teaspoons salt and 1 1/2 teaspoons pepper. Divide the beef into four equal portions, then halve each of those portions.
