Change the fruit and type of nuts to suit the occasion. 1 family sized package of Jello, any flavor you like, prepare the jello using a matching fruit and juice for the water, and the "speed set" recipe on the box but DO NOT PUT IN FRIDGE! SUGGESTIONS * Orange Jello with Canned Mandarin Orange slices * strawberry Jello with frozen strawberries * lime jello with canned pears and marichino cherries * cherry jello with a good fruit thingytail * raspberry jello with frozen raspberries * blue jello with canned black berries or blueberries The 2 hours' cook time listed is mainly to allow the mold to set.

I make it in 1 big bowl (much easier for a busy mom) but you could put it in 6 small ramekins for a prettier presentation. Adapted from a recipe in "Hey Mom! I'm Hungry!" by Susan Powter.

2 firm bananas
2 apples
1 (15 ounce) can mandarin oranges, drained
1 tablespoon honey
1/2-1 teaspoon cinnamon
1/2 cup pineapple juice
2 -3 tablespoons lemon juice
3 egg whites
1 1/2 tablespoons sugar

Steps:

  • Preheat the oven to 450.
  • Slice the bananas and chop the apples.
  • Combine all the fruit in a large oven-proof bowl or casserole.
  • Add the honey through the lemon juice and mix well.
  • Beat the egg whites until they are nice and frothy.
  • Slowly add the sugar while beating.

1 (8 ounce) package cream cheese, softened
32 ounces large curd cottage cheese
1 (15.25 ounce) can fruit cocktail, drained
1 (20 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin orange segments
1 apple - peeled, cored and diced
1 banana, peeled and sliced
1 (10 ounce) jar maraschino cherries, drained
