Joe's Mustard Sauce image

Editor's note: This recipe is reprinted from Jo Ann Bass and Richard Sax's book Eat at Joe's: The Joe's Stone Crab Restaurant Cookbook. At Joe's, the stone crabs are served cold, already cracked. They come with small metal cups of mustard or melted butter-or both. This is the mustard sauce for which Joe's is famous.

Categories     Crab

Time 25m

Yield 2 cups, 6 serving(s)

Number Of Ingredients 10

2 ounces cream cheese
1 tablespoon mayonnaise
1/4 cup sour cream
1 tablespoon butter, softened
1/4 teaspoon seasoning salt
1/8 teaspoon paprika
4 teaspoons onions, minced
4 teaspoons green peppers, minced
1/4 cup mozzarella cheese, shredded
1 (6 ounce) can crabmeat

Steps:

  • Mix cream cheese, mayo, sour cream, and butter until smooth.
  • Blend in salt and paprika.
  • Stir in onion, green pepper, cheese, and crab meat.
  • Bake at 350F for 10-15 minutes, until bubbly.

Tips:

  • Choose the right crab legs. Look for crab legs that are firm and heavy, with no cracks or blemishes. Avoid crab legs that are limp or have a slimy texture.
  • Thaw the crab legs properly. If your crab legs are frozen, thaw them in the refrigerator overnight or in a cold water bath for 30 minutes. Do not thaw crab legs at room temperature.
  • Clean the crab legs. Rinse the crab legs under cold water and scrub them with a brush to remove any dirt or debris. Cut the crab legs in half lengthwise with a sharp knife.
  • Make the BBQ sauce. Combine all of the ingredients for the BBQ sauce in a saucepan and bring to a simmer over medium heat. Reduce heat to low and simmer for 15 minutes, or until the sauce has thickened.
  • Grill the crab legs. Preheat your grill to medium-high heat. Brush the crab legs with BBQ sauce and grill them for 5-7 minutes per side, or until they are cooked through.
  • Serve the crab legs. Serve the crab legs with melted butter, lemon wedges, and your favorite sides.
