Steps:
- 1. Remove ham for refrigerater. Place in a large pot with coke and seaoning salt. Soak for 3 to 4 hours. NOTE: I soaked over night in the fridge.
- 2. Meanwhile soak hickory in water. NOTE: we cut our own hickery and soaked over night.
- 3. Place coals in smoker and fire them up. Once hot; place ham in smoker; add wet hickory on top of burning coals (this will smoke and that's what you want it to do). Add additional coals as needed.

JIMMY'S SMOKED BRISKET
While I'm totally intimidated by the grill/smoker and outdoor cooking, Jimmy is a master at it. I handled the seasoning/rub and Jimmy handled the smoking of this juicy brisket! The way this was prepared and smoked left a very favorful crunchy crust around a tender and juicy brisket. Source for "Rub": Amazing Ribs.com

Tips:
- Choose a good quality ham. Look for a ham that is free of blemishes and has a good amount of fat. A bone-in ham will have more flavor than a boneless ham.
- Soak the ham overnight. This will help to remove some of the saltiness and add moisture to the ham.
- Use a good quality smoker. A good smoker will help to create a smoky flavor and keep the ham moist.
- Smoke the ham at a low temperature. This will help to prevent the ham from drying out.
- Use a variety of woods. Different woods will give the ham different flavors. Popular woods for smoking ham include hickory, maple, and oak.
- Keep the ham moist. Spritz the ham with water or apple cider vinegar every few hours to keep it from drying out.
- Let the ham rest before carving. This will help to keep the juices in the ham.
Conclusion:
Smoking a ham is a great way to add flavor and moisture to this classic dish. By following these tips, you can smoke a ham that is perfect for any occasion.
