¼ teaspoon onion powder
Dash of pepper
¾ cup milk ((I use 2%))
2 eggs, slightly beaten
¼ cup ketchup

Steps:

  • Preheat oven to 350°F. Gently combine all ingredients except ketchup in a large bowl. Transfer to a greased loaf pan.
  • Bake (uncovered) for about 60 minutes, or until meatloaf reaches an internal temperature of 160°F and juices run clear. Tilt the pan to drain off the grease; spread ketchup on top, and return to the oven for 10 more minutes.
  • Let stand 5 minutes before slicing.

I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

1 cup old-fashioned oats
1 (8 ounce) can tomato sauce
2 large eggs, slightly beaten

¼ cup ketchup, or to taste
