1 large yellow onion, coarsely chopped
3 scallions, coarsely chopped
2 Scotch bonnet pepper, stem and seeds removed
2 tablespoons fresh ginger, grated
4 cloves garlic, coarsely chopped
2 tablespoons finely chopped fresh thyme leaves
1/4 cup red wine vinegar
1 tablespoon light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
Pinch ground cloves
1 teaspoon ground allspice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons fresh lime juice
8 chicken thighs, skin on, bone in
8 drumsticks, skin on
Mango Cilantro Salsa, recipe follows
3 ripe mangoes, peeled and diced
1/4 cup finely chopped red onion
2 tablespoons chopped fresh cilantro leaves
1 tablespoon chopped fresh oregano leaves
1 tablespoon chopped green onions
3 tablespoons lime juice
3 tablespoons fresh orange juice
1 teaspoon honey
Salt and freshly ground black pepper

Steps:

  • Puree all the ingredients, except the chicken, in a food processor until almost smooth. Pierce the chicken with a fork to make tiny holes. Place the chicken in a large shallow baking dish and rub the marinade into the chicken. Cover and refrigerate for 24 to 48 hours, depending on how intense you want the flavor to be. Preheat grill. 2 tablespoons jerk seasoning
2 tablespoons olive oil
4 boneless, skinless chicken breasts (sliced or pounded thin)
1 avocado (diced)
1 red bell pepper (seeded and diced)
1 small jalapeno pepper (seeded and diced)
2 cups chopped mango
1/3 cup chopped red onion
1-2 tablespoons chopped cilantro
1/4 teaspoon kosher salt
juice of 1/2 lime

Steps:

  • In a small bowl, stir the jerk seasoning and olive oil together into a thin paste. Rub evenly over both sides of the chicken breasts.

2 teaspoons sugar

1/4 cup semolina flour
1-1/2 teaspoons salt

Topping
1 4-ounce boneless, skinless chicken breast half
1 tablespoon Instant Gourmet Carribean Isles
1 tablespoon olive oil
1/2 cup sliced shiitake mushrooms
1/2 cup Prissy Vidalia Onion barbecue sauce
1/4 cup Cotija, grated
1/2 cup Asadero, shredded
1/4 cup AƱejo Enchilado, crumbled
Mango Salsa
1/2 ripe mango, diced
2 tablespoons diced red onion
1 tablespoon diced ripe tomato
1 tablespoon olive oil
1-1/2 teaspoons 2 leaf balsamic vinegar
1 teaspoon chopped fresh mint, basil or cilantro, or mixture of all three

  • 1. To make dough: a. In a small bowl, combine 1/4 cup water, yeast, and sugar and stir well to combine. Set aside for 5 minutes. b. In a large mixing bowl, combine all-purpose flour, semolina flour and salt. c. Add olive oil to the yeast mixture. Stir well and add to flour. Add additional 1/2 cup warm water. d. Bring the mass of dough together until a compact ball is formed. Turn dough out onto work surface and knead vigorously for 7 minutes until smooth and satiny. e. Place a small amount of olive oil in a large bowl. Put dough in the bowl and turn it twice to coat. Cover bowl with plastic wrap and a kitchen towel. Set the bowl in a warm place. f. 2 tsp jerk seasoning (we used Bart)
1 tbsp olive oil
juice 1 lime
4 skinless chicken breasts , chopped into chunks
1 large yellow pepper , cut into 2cm cubes
100g bag rocket leaves, to serve
320g pack mango chunks, diced
1 large red pepper , deseeded and diced
bunch spring onions , finely chopped
1 red chilli , chopped (optional)

  • Mix together the jerk seasoning, olive oil and lime juice. Toss the chicken in it and leave to marinate in the fridge for at least 20 mins, or up to 24 hours.
