1 medium cucumber
1 package (3 ounces) lime gelatin
1 teaspoon salt
1/2 cup boiling water
1 cup mayonnaise
1 cup 4% cottage cheese
1 small onion, grated

Steps:

  • Peel and halve cucumber; remove the seeds. Shred and pat dry; set aside. In a bowl, combine gelatin and salt with boiling water; stir until dissolved. Add mayonnaise and cottage cheese; mix well. 1 cup water, boiling
1 teaspoon onion, finely grated
1 -2 tablespoon lemon juice
1 cup cream-style cottage cheese, small curd (drained)
1 cup cucumber, finely chopped (I used 1/2 pf an unpeeled English cucumber ~ the one that comes wrapped in plastic wrap)

Steps:

  • In a medium or large bowl, dissolve jello in boiling water. Add onion and lemon juice. Chill until partially set, 20 to 30 minutes.
  • Beat at high speed until light and fluffy. Fold in cottage cheese and cucumbers.
  • Pour into mold or 8-inch square pyrex baking pan. Chill 4 hours or overnight.
