1-1/2 c basmati rice
2 c chopped celery
1 small chopped onion
2 clove garlic, chopped
1 Tbsp olive oil
4 c water
1/2 c golden raisins (regular are ok, too)
2 chicken bouillon cubes
1 Tbsp brown sugar
1 tsp curry powder
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp pepper
1/2 c chopped pecans
1/2 c diced apple

Steps:

  • 1. Saute the celery, onion and garlic in olive oil in heavy skillet on medium heat until tender. Add water, raisins, bouillon cubes, brown sugar, curry powder, salt, pepper and cinnamon to water and mix well. Bring to a boil, stirring occasionally. Stir in the rice and reduce heat
  • 2. Cover and simmer for 20-25 minutes until liquid is absorbed and rice is tender. Remove from heat; let stand for 10 minutes Stir in the pecans and apples and fluff up
  • 3. May be garnished with additional pecans and raisins.

1 teaspoon olive oil
1 ½ cups chopped onion
2 cloves garlic, crushed
2 ½ cups chopped yellow bell pepper
1 tablespoon ground cumin
1 tablespoon hot paprika
1 tablespoon chile powder
2 teaspoons white sugar
½ teaspoon salt
¼ teaspoon ground cloves
2 (14.5 ounce) cans stewed tomatoes
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can black beans, drained
1 (15 ounce) can cannellini beans
1 (6 ounce) can tomato paste
2 tablespoons balsamic vinegar
⅓ cup chopped fresh cilantro

Steps:

  • Place ground round in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • Coat a large Dutch oven with cooking spray, and place over medium-high heat. When pan is hot, cook the onion and garlic in olive oil until the onion is tender. Add the yellow pepper, and cook until tender. Season with cumin, paprika, chile powder, sugar, salt, and cloves. Stir in the stewed tomatoes, kidney beans, black beans, and cannellini beans. Pour in water to cover. Bring to a boil, then stir in the meat and tomato paste. Bring to a boil, and simmer for 30 minutes.
  • Remove from heat, stir in the vinegar and serve hot topped with fresh cilantro.

1 1/2 lbs ground beef
1 tablespoon olive oil
2 medium onions, chopped
2 -3 garlic cloves, minced
2 1/2 cups chopped red peppers (or both) or 2 1/2 cups yellow peppers (or both)
1 tablespoon ground cumin
1 tablespoon paprika (hot if possible)
1 tablespoon chili powder
2 teaspoons white sugar
1/2 teaspoon salt
1/4 teaspoon ground cloves
2 (14 1/2 ounce) cans diced tomatoes
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can black beans, drained
1 (15 ounce) can cannellini beans, drained
1 (6 ounce) can tomato paste
2 tablespoons balsamic vinegar

Steps:

  • Brown ground beef over medium high heat in a large, deep frying pan.

2 pounds bone-in chicken breast halves, skin removed
2 tablespoons Caribbean jerk seasoning
1/4 cup dried minced onion
3 tablespoons minced fresh gingerroot
2 tablespoons Worcestershire sauce
1 tablespoon grated lime zest
1 teaspoon cumin seeds, crushed
3 fresh thyme sprigs
Hot cooked rice

Steps:

  • Place potatoes in a 4- or 5-qt. slow cooker. Add water chestnuts and cranberries. Drain pineapple, reserving juice; add pineapple to slow cooker. Top with chicken.
