3 ounces granulated sugar (1/4 cup plus 2 tablespoons; 85g)
1/4 ounce (1 tablespoon plus 1 1/2 teaspoons; 5g) freeze-dried strawberry powder, optional (see note)
3/4 teaspoon fresh lemon juice from one lemon (3g)
1/8 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
3 ounces strawberry jam (1/4 cup plus 2 tablespoons; 85g)

Steps:

  • In a blender, combine strawberries, sugar, freeze-dried strawberry powder (if using), lemon juice, and salt, and process until very smooth, about 30 seconds.
  • Pour purée into a medium bowl, add jam, and whisk until thoroughly combined.
  • Divide evenly between six 3-fluid-ounce popsicle molds and freeze until solid, at least 8 hours (to make filling the molds easier, you can transfer the puréed strawberry base back to the blender jar or to a measuring cup or another vessel with a spout first). To unmold, follow your popsicle mold's instructions.

Tips:

  • Choose the right fruit: Use ripe, fresh fruit that is free of blemishes. The type of fruit you choose will determine the flavor of your jam pop.
  • Prepare your fruit: Wash the fruit thoroughly and remove any stems, seeds, or pits. Cut the fruit into small pieces so that it cooks evenly.
  • Use a good quality jam: The quality of the jam you use will affect the flavor of your jam pop. Look for a jam that is made with real fruit and has a good consistency.
  • Don't overcook the jam: Overcooked jam will be thick and gummy. Cook the jam just until it reaches a thick, spreadable consistency.
  • Chill the jam pop before serving: Chilling the jam pop will help it to firm up and make it easier to eat.

Conclusion:

Jam pops are a delicious and refreshing treat that are perfect for any occasion. They are easy to make and can be customized to your liking. With a little creativity, you can create unique and flavorful jam pops that will be a hit with everyone. So next time you are looking for a fun and easy snack, give jam pops a try.
