Sunny's Easy Peachy Jalapeno Cornbread image

Provided by Sunny Anderson

Time 55m

Yield 8 mini loaves

Number Of Ingredients 9

Two 8.5-ounce boxes cornbread mix (I prefer Jiffy)
2 large eggs (or according to box instructions, remembering to double)
2/3 cup whole milk
1/2 cup chopped canned peaches in syrup, drained and syrup reserved
2 teaspoons chili-lime seasoning
2 jalapenos, finely chopped, seeds included (about 1/3 cup)
1 tablespoon salted butter, melted
1 tablespoon fresh lime juice
1 tablespoon salted butter

Steps:

  • For the batter: Add the cornbread mix to a large bowl. Whisk the eggs, milk, peaches, chili-lime seasoning and jalapenos in a medium bowl. Fold the egg mixture into the cornbread mix. Let rest 5 minutes.
  • Preheat oven to 400 degrees F. Brush 8 mini loaf pans with the melted butter. Pour a scant 1/2 cup of the batter into each of the loaf pans and spread evenly (each should be about three-quarters of the way full). Bake until the tops are golden, about 20 minutes.
  • For the glaze: Add 1/4 cup of the reserved peach syrup to a small pot, then add the lime juice and butter. Stir together and heat until everything begins to simmer. Remove the cornbread from the oven and immediately pour the glaze over the top of the loaves. Allow it to soak in. Serve warm.

CHUNKY PEACH SPREAD

Chunky Peach Spread image

Here's a fruit spread that captures the best tastes of late summer. I like that it's low in sugar and not overly sweet, which lets the fresh peach flavor shine right through. - Rebecca Baird, Salt Lake City, Utah

Time 30m

Yield about 3-1/2 cups.

Number Of Ingredients 5

7 medium peaches (2 to 2-1/2 pounds)

JALAPENO PEACH SPREAD

Jalapeno Peach Spread image

This recipe comes from a delightful book "Christmas Gifts of Good Taste." Originally posted to fill a request, I made this last year for the holidays and it was a big hit. This makes just a little over 4 cups of spread (kind of like a jelly sauce). Try this poured over cream cheese for a fast appetizer. Once opened, use up quickly - in about 1-2 weeks.

Categories     Fruit

Time 45m

Yield 4 cups

Number Of Ingredients 4

3 (15 ounce) cans sliced peaches in juice, drained
1/4 cup seeded and chopped red jalapeno pepper
2 cups sugar
1/4 teaspoon allspice

Steps:

  • Place peaches and jalapenos in a food processor and pulse until finely chopped.
  • Pour this mixture into a Dutch oven or large saucepan.
  • Add sugar and allspice and combine well.
  • Stirring constantly, bring to a boil over medium-high heat, then lower the heat to medium-low.
  • Cook 20 minutes over medium-low, stirring often, or until thickened.
  • It will be like a thick sauce.
  • Ladle into clean,sterilized,heat-resistent jars.
  • Cover with clean, sterilized lids and let cool to room temperature.
  • Place in refrigerator and keep chilled.
  • This is not shelf stable jam (it must be refrigerated even when sealed) as it has not been heat canned.
  • Use up the spread within one month or two weeks after opening.
  • Serve with cream cheese on crackers.

Tips:

  • To ensure a smooth spread, remove the skin from the peaches before cooking. Blanch the peaches by submerging them in boiling water for 30 seconds, and then immediately transfer them to an ice bath to stop the cooking process. The skin will easily peel off after blanching.
  • Use ripe, juicy peaches for the best flavor. If the peaches are not ripe, they will not be as sweet and the spread will be less flavorful.
  • Add a bit of heat to the spread by using a hotter variety of jalapeños, such as serrano or habanero peppers. Remove the seeds and ribs from the peppers before chopping to control the level of heat.
  • The spread can be made ahead of time and stored in the refrigerator for up to two weeks. It can also be frozen for up to six months. When ready to serve, thaw the spread overnight in the refrigerator or at room temperature for several hours.

Conclusion:

This Jalapeno Peach Spread is a unique and flavorful condiment that can be enjoyed in a variety of ways. It is perfect for adding a sweet and spicy kick to sandwiches, wraps, and burgers. It can also be used as a dipping sauce for chicken, fish, or vegetables. With its vibrant color and delicious taste, this spread is sure to be a hit at your next party or gathering.
