½ bunch cilantro

1 (16 ounce) container fat-free sour cream
2 (1 ounce) packages ranch dressing mix

5 cloves garlic
1 heaping tablespoon chopped pickled jalapenos, plus 1 or 2 whole pickled jalapenos, minced
1 tablespoon Dijon Mustard
1/4 teaspoon coarse salt
1/4 teaspoon hot sauce
1/4 teaspoon Worcestershire sauce
1 tablespoon sugar
1/4 cup apple cider vinegar
1/2 cup olive oil
1 shallot, finely chopped

Steps:

  • In the jar of a blender or the bowl of a food processor, combine garlic, 1 tablespoon jalapenos and mustard; pulse until pureed. Add salt, hot sauce, Worcestershire sauce, sugar, and vinegar; pulse until smooth. With the blender running, add olive oil in a slow, steady stream; mix until emulsified. Transfer mixture to a small bowl and stir in shallots and remaining jalapenos.

2 red-skinned apples, cored and julienned
1/4 cup jalapeño pickling juice
1/4 cup apple juice or cider

  • For the slaw: In a large bowl, toss the slaw mix, raisins, jalapeños, cilantro, parsley, mint and apples.

1.5 cups Corn chips/tostadas, crumbled
1.5 cups Corn kernels
3 cups Chicken stock
1.25 cups Canned cream-style corn
12 Pork tamales, unwrapped, chopped in 1-inch chunks
1 salt and pepper to taste

Steps:

  • Make a cornbread recipe, cool, crumble into large bowl.
  • Melt butter in heavy large skillet over medium heat.
  • Add onion, bell peppers, all chiles, sage, and oregano. Saute until tender.
  • Transfer to bowl with cornbread.
  • Mix in cilantro, corn chips, corn kernels, cream corn, and heated chicken stock.
  • Add tamales at the end and do not break up.
  • Salt and pepper to taste.
  • If stuffing too dry, add a little melted butter.

lime zest
4 tablespoons honey
1 tablespoon garlic, pureed or minced

1/4 cup rice vinegar

2 1/4 cups canola oil

onion
celery (whatever you want)

  • Puree all of the dressing ingredients in a blender or processor, except the oil.
  • Emulsify slowly with the oil. Supposedly you can sub the oil with half buttermilk and half mayo, but I haven't tried this yet.
  • Put together the coleslaw of your choice, add dressing and refrigerate for a few hours.
  • I usually make half of this- depends on how many you're serving!

Pre heat oven to 375 degrees;cut cornbread into 1/4 inch cubes.Bake on cookie sheet until dry but not hard,about 15min.Transfer to a large bowl. Melt butter in a heavy large skillet over medium high heat.Add sausage;saute until brown,about 6 min.Add onions,celery,jalapenos and garlic saute until tender,about 8 min.Stir in chili powder and cumin;saute 2 min.Stir in nuts,season with salt and pepper,add broth. Butter baking dish transfer dressing to dish.Bake covered for 45 min.Bake uncovered until crunchy.15 min.
