ITALIAN ZUCCHINI SALAD

My husband, Robert, doesn't care much for zucchini, but even he likes this salad, so it's one I make often. The dressing is generous-it can be used on other green salads and even to marinate meats for the grill. I'm always trying new recipes, and I have lots of eager tasters with three children, six grandchildren and six great-grandchildren. I've entered recipe contests many times before, but this is the first time I've had a recipe picked. It's the nicest feeling!

  • Choose fresh, firm zucchini: Look for zucchini that are deep green in color and have no blemishes. Avoid zucchini that are yellow or have soft spots.
  • Slice the zucchini thinly: This will help the zucchini cook evenly and absorb the dressing better.
  • Marinate the zucchini: Marinating the zucchini in a mixture of olive oil, vinegar, and herbs will help to infuse them with flavor.
  • Use a variety of herbs and spices: This will give the salad a more complex flavor. Some good options include basil, oregano, thyme, rosemary, garlic, and red pepper flakes.
  • Don't overcook the zucchini: Zucchini should be cooked until just tender-crisp. Overcooked zucchini will be mushy and bland.
