Time 1h10m

Yield 6

Number Of Ingredients 13

1 large zucchini, cut in half lengthwise
1 teaspoon garlic salt
¼ cup olive oil
1 onion, chopped
1 teaspoon minced garlic
1 ½ pounds ground beef sirloin
2 eggs
1 ½ cups Italian seasoned bread crumbs
1 tablespoon dried basil
¼ cup grated carrot
⅓ cup grated Parmesan cheese
1 (26.5 ounce) can spaghetti sauce, divided
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out and discard zucchini seeds, leaving the hollowed-out shells. Sprinkle the garlic salt into the hollowed-out zucchini, and set aside. Heat olive oil in a skillet over medium heat, and cook the onion and garlic until the onion is translucent, about 5 minutes. Remove from heat and allow to cool.
  • In a mixing bowl, mix the ground beef, eggs, bread crumbs, basil, carrot, and Parmesan cheese together with the onion mixture. Stuff the zucchini halves with the meat mixture, and place them into a baking dish. Spoon about half the spaghetti sauce over the zucchini, covering all the meat and allowing sauce to drip down the sides of the zucchini boats.
  • Bake in the preheated oven until the meat is no longer pink in the center and the zucchini are tender, about 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Sprinkle the mozzarella cheese over the zucchini, and return to oven until the cheese melts, about 5 more minutes. Heat the remaining spaghetti sauce in a small saucepan over medium heat while the zucchini boats are cooking. Serve the zucchini boats with the additional sauce on the side.

ITALIAN STUFFED ZUCCHINI BOATS

Italian Stuffed Zucchini Boats image

This recipe I adapted from a stuffed mushroom and another stuffed zucchini recipe. It's a great way to use those extra large zucchini that somehow appear in the garden overnight. This is not low fat, but it is totally delicious.

Categories     Pork

Time 1h5m

Yield 8 serving(s)

Number Of Ingredients 8

1 large zucchini (12-15 inches long)
1 1/2 lbs mild Italian sausage
16 ounces mushrooms, sliced
1 large onion, chopped
3 garlic cloves, minced
1/3 cup seasoned bread crumbs
8 ounces cream cheese
1 cup parmesan cheese, shredded (separated)

Steps:

  • Split zucchini lengthwise after cutting off the very ends.
  • Scoop out seeds from center of zucchini allowing 1-2 inches of flesh on the outside of the "boat." (I cut a small amount off the under side of each boat to allow it to lay flat.).
  • Place boats on large jelly roll pan. (I cover the pan with aluminum foil to make clean up easier.).
  • In large skillet, begin browning sausage, mushrooms, and onion. When mixture is about half done, add garlic. Continue to cook until meat is cooked through.
  • Preheat oven to 350 degrees.
  • Stir in bread crumbs, cream cheese and 1/2 cup of Parmesan cheese and blend well.
  • Spoon mixture into zucchini boats.
  • Heat in oven for 30-35 minutes or until zucchini gives easily when stuck with a fork.
  • Sprinkle with remaining Parmesan and cook an additional 10 minutes or until golden brown.
  • Remove from oven and slice to serve.

Tips:

  • Choose the right zucchini: Select medium-sized zucchinis with firm, unblemished skin. They should be about 6-8 inches long and 2-3 inches in diameter.
  • Prepare the zucchini boats: Cut the zucchinis in half lengthwise and scoop out the pulp, leaving a 1/4-inch border. Brush the insides with olive oil and season with salt and pepper.
  • Use fresh, flavorful ingredients: The filling for your zucchini boats should be packed with flavor. Use a variety of fresh vegetables, herbs, and spices to create a delicious and satisfying dish.
  • Don't overcook the zucchini: Zucchini boats should be cooked until they are tender but still have a slight crunch. Overcooking will make them mushy.
  • Serve the zucchini boats immediately: Zucchini boats are best enjoyed fresh out of the oven. Serve them with a sprinkle of Parmesan cheese, fresh herbs, or a dollop of sour cream.

Conclusion:

Zucchini boats are a delicious and versatile dish that can be enjoyed as an appetizer, main course, or side dish. They are easy to make and can be customized to your liking. With their vibrant colors and fresh flavors, zucchini boats are a surefire hit at any gathering. So next time you're looking for a healthy and delicious meal, give zucchini boats a try. You won't be disappointed!
