SMOKED ITALIAN PANINI

Smoked Italian Panini image

One day while watching food network I saw a panini made on Paula's Party and it looked absolutely delicious. I searched the recipe and realized I wouldn't be able to find much of the ingredients here. So I decided to try and create my own so to speak with what I could find. A few tries later I settled on this one and I am done searching! It is fabulous! A great blend of flavors! I am not sure how easy it would be to find those meats singularly but I bought them in a gourmet pack in the deli section. I had to name the meats "sausage" so that recipe zaar would recognize them, though I don't know that they are actually a sausage or not. Its more like a salami or pepperoni.

Categories     One Dish Meal

Time 15m

Yield 4 serving(s)

Number Of Ingredients 14

3 ounces calabrese hot Italian sausage links, thinly sliced
3 ounces pepper salami, thinly sliced
3 ounces hot capicolla sausage, thinly sliced
3 -5 ounces prosciutto, thinly sliced
3 ounces smoked gouda cheese, sliced for 4 paninis
2 teaspoons balsamic vinegar
2 teaspoons extra virgin olive oil
1/4 medium red onion
1/3 cup sweet roasted red pepper
1 1/4 cups baby romaine lettuce
olive oil flavored cooking spray
italian seasoning
shaved parmesan cheese
4 asiago cheese rolls

Steps:

  • Meat should be very thinly sliced (I use the Daniele brand 'Italian Blend Gourmet Pack' found at a local grocer). Fry each piece for a short time, just long enough to heat them up a bit and release the juices.
  • Pat down with a paper towel to remove excess grease.
  • Cut the rolls in half and spray olive oil cooking spray on all insides. Then sprinkle italian seasoning over each piece.
  • Arrange bread on baking sheet and put under broiler for 4-5 minutes until browned well.
  • Build Panini in the following order: Bread, baby romaine, couple of rings of red onion, the first three meats, couple slices of smoked gouda, prosciutto, peppers, 1/2 teaspoons balsamic vinegar, 1/2 teaspoons olive oil drizzled over top and top the entire thing off with some shaved parmesan.
  • Enjoy!

ITALIAN-STYLE TUNA SANDWICH

Italian-Style Tuna Sandwich image

Though an American cook (or even a French one) usually adds mayonnaise to the bowl when dressing canned tuna for a sandwich, Italian cooks invariably anoint theirs with olive oil instead. Capers, olives and anchovy often join the festivities; here they are combined with garlic and parsley to make a zesty salsa verde. Choose the best quality Italian or Spanish canned tuna-the extra cost is well worth it. The other essential ingredient is freshly baked bread, like a good crisp baguette or crusty ciabatta roll.

Provided by David Tanis

Categories     dinner, lunch, quick, sandwiches, main course

Time 15m

Yield 4 servings

Number Of Ingredients 15

1 cup Italian parsley leaves, washed and dried
1/2 cup extra-virgin olive oil, plus more as needed
2 garlic cloves, minced
1/4 cup roughly chopped green olives, such as Castelvetrano
3 or 4 anchovy fillets, chopped
1 tablespoon chopped capers
Zest of 1 lemon
Pinch of crushed red pepper
Salt and pepper
1 baguette or 4 ciabatta rolls
Handful of lettuce leaves, arugula or watercress
8 ounces best quality oil packed tuna, drained, in large chunks
4 hard-boiled eggs
Salt and pepper
1 serrano chile, thinly sliced, optional

Steps:

  • Make the salsa verde: Whiz parsley leaves and 1/2 cup oil in a food processor or blender to a pesto-like consistency, then transfer to a small bowl. (Alternatively, chop parsley by hand and combine with oil.) Add garlic, chopped olives, anchovies, capers, lemon zest and red pepper to parsley mixture and stir well. Season with salt if necessary and freshly ground black pepper to taste. Thin with more oil as desired.
  • Cut baguette crosswise into 4 equal pieces, then split each lengthwise with a serrated knife. (If using rolls, split each lengthwise.) For each sandwich, lay bread flat, crust side down. Spread cut sides with 2 tablespoons salsa verde. Put a few lettuce leaves on 1 piece of bread and arrange 2 ounces of tuna over lettuce. Top tuna with 1 egg, quartered. Season egg lightly with salt and pepper. Add sliced serrano chile, if using. Drizzle with a little more salsa verde, then press sandwich closed.

Tips:

  • Use high-quality tuna: Opt for tuna packed in olive oil or water and avoid tuna packed in vegetable oil, as it can be lower in quality and have a less desirable flavor.
  • Choose a flavorful bread: A sturdy bread like ciabatta or focaccia will hold up well to the fillings and won't get soggy. You can also use a softer bread like white or wheat bread, but be sure to toast it so it can better support the fillings.
  • Don't overpack the sandwich: Too many fillings can make the sandwich difficult to eat and may cause the bread to become soggy. Aim for a balanced combination of ingredients that will fit comfortably inside the bread.
  • Use a variety of toppings: Don't just stick to lettuce and tomato. Experiment with different toppings like roasted peppers, artichoke hearts, capers, or olives to add flavor and texture to your sandwich.
  • Garnish with fresh herbs: A sprinkling of fresh herbs like basil, oregano, or thyme can add a pop of color and flavor to your sandwich.

Conclusion:

The Italian tuna panini is a versatile and delicious sandwich that can be enjoyed for lunch, dinner, or even as a snack. With its simple ingredients and endless variations, it's a great option for home cooks of all skill levels. So next time you're looking for a quick and easy meal, give the Italian tuna panini a try. You won't be disappointed!
