- Place chicken stock in a small pot and warm over low heat.
- Heat a medium sized skillet over medium heat. Add extra-virgin olive oil 2 turns of the pan, and garlic. Saute garlic 1 minute, then add Arborio. Toast the Arborio rice 2 minutes, then ladle in 1/3 of the stock. Bring to a bubble. Stir rice occasionally, allowing the rice to get starchy and the stock to cook into the rice. Add more stock when rice starts to become dry. Continue stirring and ladling broth until rice is al dente, 22 minutes. Stir in peas and cheese and season with salt and pepper, to your taste. Serve immediately.

The best thing about this dish is the creamy sauce.., which contains no milk or cream at all! Potato latkes taste incredible with this sauce, but you can also serve this dish with pasta, mashed potatoes, or even just a piece of crusty bread.

- Season the chicken with salt & pepper, then dust generously with flour. Set aside.
- In a bowl, whisk the lemon juice and egg yolks together. Set aside.
- Heat 1 tablespoon of oil in a large pan over medium-high heat. Add the onion, fennel, parsley and fennel seeds. Cook for five minutes while stirring occasionally.
- Add the remaining oil and the chicken to the pan and cook for at least 4 minutes on each side. Remove the chicken and onion mixture and set aside.
- Deglaze the pan by pouring in the Marsala wine and cooking over high heat until reduced to about 2 tablespoons (about 2 minutes), then pour in the stock. Add the peas, chicken, and onion mixture. Cook over a very low heat for 5 minutes, or until the peas are cooked through.
- Gradually add the lemon juice & egg yolk mixture to the pan while stirring constantly. Keep stirring over very low heat until the mixture thickens to a creamy consistency, about 1 minute. DO NOT ALLOW THE SAUCE TO BOIL. Serve the chicken immediately.
PASTA WITH PEAS AND ITALIAN SAUSAGE

- Cook the pasta following the package directions. Meanwhile in a very large skillet over medium heat add the olive oil and add the sausages. Sauté` the sausage meat until slightly brown all over, add the frozen peas and the tomatoes. Season to taste with salt and pepper. Lower the heat to medium and cook for another 10 to 15 minutes. Drain the pasta and return it to the pan, add the butter and the tomatoes with sausage. Mix well and server hot.
Tips:
- Fresh or frozen peas? You can use either fresh or frozen peas for this recipe. If using frozen peas, thaw them before cooking.
- Use good-quality olive oil. This will make a big difference in the flavor of the dish.
- Don't overcook the peas. They should be tender but still have a slight bite to them.
