FENNEL-APPLE SALAD WITH WALNUTS

Fennel-Apple Salad With Walnuts image

A bright and tangy salad cuts the heaviness of the typical Thanksgiving meal. This one, with fennel, celery, apples and toasted walnuts, is all crunch, which the carb-heavy meal can generally use more of. You can make the dressing a day ahead and store it in the fridge, but don't dress the salad until an hour before serving.

PORK CHOPS WITH FENNEL AND CAPER SAUCE

Pork Chops with Fennel and Caper Sauce image

Provided by Giada De Laurentiis

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 11

1/4 cup olive oil
4 boneless (2-inch-thick) pork chops (about 2 pounds total)
3/4 teaspoon salt, plus more for seasoning meat
3/4 teaspoon freshly ground black pepper, plus more for seasoning meat
2 fennel bulbs with fronds, thinly sliced (about 8 ounces or 2 cups)
2 large shallots, thinly sliced
1/3 cup chopped fresh flat-leaf parsley, plus 1/3 cup
1/2 cup white wine
1 (28-ounce) can diced tomatoes, with their juices
1/2 lemon, zested
2 tablespoons capers

Steps:

  • In a large, heavy skillet heat the olive oil over high heat. Season the pork chops with salt and pepper. Add the pork to the pan and brown on both sides, about 4 minutes each side. Remove the pork from the pan, cover loosely with foil, and set aside.
  • Add the fennel, shallots, and 1/3 cup parsley to the pan and cook over medium heat until beginning to brown, about 5 minutes. Add the wine. Using a wooden spoon, scrape the brown bits off the bottom of the pan. Add the tomatoes and stir. Add the pork back into the pan, nestling the chops between the fennel and tomatoes so they are mostly submerged in the pan juices. Cook until the fennel is tender and the pork is done, about 12 to 15 minutes.
  • Place the pork on a serving dish. To finish the sauce, add the lemon zest, remaining 1/3 cup parsley, capers, and 3/4 teaspoon each salt and pepper. Stir to combine. Spoon over the pork chops and serve immediately.

ITALIAN COLESLAW WITH FENNEL AND CAPERS

Italian Coleslaw with Fennel and Capers image

Categories     Vegetable     Side     No-Cook     Low Fat     Low/No Sugar     Summer     Healthy     Raw     Bon Appétit

Yield Makes 4 servings

Number Of Ingredients 7

4 cups chopped red cabbage (from about 1/2 large head)
1 medium fennel bulb, trimmed, chopped
1/2 cup chopped fresh Italian parsley
3 tablespoons drained capers
3 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
2 garlic cloves, minced

Steps:

  • Combine cabbage, fennel, parsley, and capers in large bowl; toss to blend. Mix in lemon juice, oil, and garlic. Season to taste with salt and pepper. (Can be prepared 2 hours ahead. Cover and refrigerate. Toss before serving.)

Tips:

  • To enhance the flavor of the coleslaw, use a mandoline or food processor to thinly slice the cabbage and fennel. This will create a uniform texture and allow the dressing to coat the vegetables evenly.
  • Choose a high-quality mayonnaise for the dressing. Inferior quality mayonnaise can overwhelm the delicate flavors of the cabbage and fennel.
  • If you don't have capers on hand, you can substitute another briny ingredient, such as chopped cornichons or olives.
  • Feel free to adjust the amount of red wine vinegar and sugar in the dressing to suit your personal taste preferences.
  • For a more vibrant appearance, add a handful of chopped fresh herbs, such as parsley, cilantro, or chives, to the coleslaw before serving.

Conclusion:

Italian coleslaw with fennel and capers is a refreshing and flavorful side dish that is perfect for any occasion. It is easy to make and can be tailored to your own personal taste preferences. So next time you're looking for a healthy and delicious addition to your meal, give this Italian coleslaw a try.
