ITALIAN CHICKEN SALAD SANDWICHES
My whole family loves this recipe. The Italian pickled vegetables give it a distinctive taste. I also serve it on a bed of lettuce, or as an appetizer on crackers.

CRAIG CLAIBORNE'S CHICKEN SALAD SANDWICH
Originally printed in 1981, here is Craig Claiborne's take on the classic chicken salad sandwich. In his version, a combination of mayonnaise (preferably homemade) and yogurt is used which yields a lighter, tangier sandwich filling. He calls for using poached chicken, but the leftover roast chicken from last night would work beautifully as well.

Don't let the ingredient list fool you-this summery chicken salad is so simple! Prepare it in the morning; let it chill all day; and then toss with the dressing right before you serve it. For another spin, I sometimes add fresh grilled corn. -Daniel Anderson, Kenosha, Wisconsin

Tips:
- Use high-quality ingredients for the best flavor. Fresh, organic ingredients will make a big difference in the taste of your Italian chicken salad sandwiches.
- Don't overcook the chicken. Overcooked chicken will be dry and tough. Cook it just until it is cooked through, then remove it from the heat and let it cool.
- Use a variety of vegetables in your salad. This will add flavor, texture, and nutrients. Some good options include celery, carrots, onion, red bell pepper, and cucumber.
- Add some herbs to your salad for extra flavor. Basil, oregano, and thyme are all good choices.
- Use a good-quality mayonnaise. A cheap, low-fat mayonnaise will not taste as good as a full-fat mayonnaise made with real eggs.
- Season your salad to taste. Add salt, pepper, and other seasonings to taste until you get the perfect flavor.
- Chill your salad for at least 30 minutes before serving. This will allow the flavors to meld and the salad to firm up.
- Serve your Italian chicken salad sandwiches on your favorite bread. Some good options include ciabatta, focaccia, or a baguette.
Conclusion:
Italian chicken salad sandwiches are a delicious and easy-to-make lunch or dinner option. They are perfect for picnics, potlucks, or just a quick meal at home. With a few simple ingredients, you can create a flavorful and satisfying sandwich that everyone will love.
