Categories     Cookies     Nut

Yield 24 cookies

Number Of Ingredients 7

3 egg whites
1 (16 oz.) package Bob's Mill finely ground Almond meal flour OR 1 lb. almonds very finely ground
1 1/2 cups sugar
2 tsp almond extract
1/4 tsp salt
1 cup sliced almonds
Powdered sugar

Steps:

  • 1. Beat egg whites until foamy in a large bowl. Stir in almond meal, sugar, extract and salt; cover and refrigerate for at least 2 hours to chill. 2. Preheat oven to 300 degrees and line baking sheets with parchment paper. Press almonds with your fingers to break into smaller pieces. Shape dough into 1 1/2 inch crescents and roll in almonds, place on baking sheets. 3. Bake for 20 minutes for softer or 30 minutes for firmer macaroons. Dust with powdered sugar.

Tips:

  • Use almond flour that is finely ground. This will ensure that your macaroons have a smooth texture.
  • Toast the almonds before using them. This will enhance their flavor and make them more fragrant.
  • Beat the egg whites until they are stiff peaks. This will help the macaroons rise and become light and airy.
  • Do not overmix the batter. Overmixing will make the macaroons tough.
  • Drop the batter onto the prepared baking sheet in small mounds. This will help them spread out and form round macaroons.
  • Bake the macaroons at a low temperature for a long period of time. This will help them dry out and become crispy.
  • Store the macaroons in an airtight container at room temperature. They will keep for up to a week.

Conclusion:

Italian almond macaroons are a delicious and easy-to-make treat. They are perfect for any occasion, whether you are serving them at a party or enjoying them as a snack.
