1/3 cup extra-virgin olive oil, plus a drizzle
6 slices thick cut bacon, chopped
1 clove garlic, grated or minced and crushed with flat blade of a knife
1 tablespoon Dijon mustard
2 tablespoons white balsamic vinegar or white wine vinegar
Salt and freshly ground black pepper
3 tablespoons chopped chives
1 large heart romaine lettuce
1 head Traviso lettuce or radicchio
1 pint multi colored, red or yellow cherry tomatoes

Steps:

  • Heat a drizzle of olive oil in a skillet over medium-high heat and add bacon, cook until crisp then drain on paper towels.
  • In a salad bowl, whisk together the garlic, mustard, vinegar and stream in extra-virgin olive oil to incorporate the dressing, season with salt and pepper and stir in chives. Shred lettuces and add to the bowl. Halve the cherry tomatoes and add to the bowl along with bacon. Toss salad to coat evenly with dressing and serve.

the first time i made this i was kina not really wanting to use mayo i dont care for it but i did anyway and the vinegar just does something to it to make it good my 12 yr. old son just loves it we dont stuff the tomatoes we mix in a bowl cut up the tomatoes and eat this for a meal its very filling

2 heads romaine lettuce
1 16oz. pack any bacon of choice
4 beef steak tomatoes the largest you can find
2 c mayonnaise
2 Tbsp apple cider vinegar
1 box favorite croutons

Steps:

  • 1. cook bacon till crisp let cool cut into bite size or i crumble
  • 2. cut circle in tops of tmoatoes remove insides so you have a bowl as you would for stuffed peppers save juice from the tomatoes in small bowl
  • 3. cut romaine lettuce put in large bowl this will be the bowl youll serve in if you choose to instead
  • 4. measure out 2 cups mayo stir in 2 tbls.apple cider vinegar stir well mix in 2-3 tbls. of tomato juice from the ones you cut and this is my inside out blt salad you have your bacon, tomato,lettuce mayo and croutons are your bread
  • 5. in large bowl put lettuce,bacon,croutons,add dressing mix well, stuff you tomatos with filling i suggest adding croutons and stuff right before serving they tend to get soggy i hope you enjoy my 12 yr. old son loves it
