2 to 3 tablespoons olive oil
1 small onion, finely chopped
2 garlic cloves, minced
2 cups long-grain white rice
1 teaspoon achiote powder
1 bay leaf
2 cups canned crushed tomatoes
2 1/2 cups low-sodium chicken broth

Steps:

2 cups chicken stock, warm
2 poblano chile peppers
1 bunch cilantro, leaves chopped (about 1 cup)
Salt
3 tablespoons corn oil
1 medium yellow onion, finely diced (about 2 cups)
1 cup medium or long-grain white rice
3 cloves garlic, minced
Freshly ground black pepper
4 scallions, white and pale green parts only, sliced, optional

Steps:

  • In a blender combine, warm chicken stock, poblano peppers, cilantro and 1 teaspoon salt.
  • Blend until smooth.

2 tablespoons unsalted butter, melted
1/4 cup finely chopped fresh cilantro leaves
1/4 cup finely chopped flat-leaf parsley
1/2 teaspoon lime zest
1/4 cup finely grated Parmesan
Salt and freshly ground black pepper

Steps:

  • Preheat your broiler to high.
  • Heat the rice in your microwave until it's warmed through. Place the rice in a flameproof casserole or baking dish and toss with the melted butter, the chopped cilantro, parsley, lime zest and Parmesan. She gives an important hint for success: During cooking, when the liquid has almost completely evaporated there will be tunnels in the rice. That is the time to add the raisins and almonds.
