OLD-FASHIONED STRAWBERRY JAM CAKE

Old-Fashioned Strawberry Jam Cake image

This was my husband's great-grandmother's old-fashioned strawberry cake recipe. We enjoy eating it at Christmas. Make sure the humidity is low when making the filling. This makes a lot of filling. If I have extra filling, I drop it on waxed paper and we eat it like divinity.

Tips for Baking Perfect Individual Strawberry Jam Cakes:

  • Use Fresh Strawberries: Fresh strawberries deliver the best flavor and texture to your cakes. If using frozen strawberries, thaw and drain them before use.
  • Choose Quality Strawberry Jam: Select a high-quality strawberry jam made with real strawberries and minimal added sugar. This will ensure the best flavor and consistency in your cakes.
  • Whisk Dry Ingredients Thoroughly: Whisking the dry ingredients together before adding them to the wet ingredients helps prevent lumps and ensures an even distribution of the leavening agents.
  • Cream Butter and Sugar Until Light and Fluffy: This step incorporates air into the mixture, resulting in a lighter and more tender cake. Creaming the butter and sugar together also helps dissolve the sugar, preventing a grainy texture.
  • Add Eggs One at a Time: Gradually adding the eggs one at a time allows them to fully incorporate into the batter without curdling.
  • Mix in Dry Ingredients Gradually: Adding the dry ingredients to the wet ingredients in three additions helps prevent overmixing, which can result in a tough cake.
  • Do Not Overmix the Batter: Overmixing the batter can result in a tough, dense cake. Mix just until the ingredients are combined and no streaks of flour remain.
  • Fill Liners Only 2/3 Full: The cakes will rise during baking, so filling the liners only 2/3 full prevents them from overflowing.
  • Bake Until a Toothpick Inserted into the Center Comes Out Clean: This is the best way to ensure that the cakes are fully baked.

Conclusion:

These individual strawberry jam cakes are a delightful treat that combines the flavors of sweet strawberries, tangy jam, and moist vanilla cake. Perfect for any occasion, they are easy to make and sure to impress your friends and family. With a few simple tips and tricks, you can achieve perfectly baked cakes with a tender crumb and a burst of strawberry flavor in every bite.
