This recipe was made by Bertie the winner of Mr. Food's first ever Idaho Potato Recipe Contest. I changed the way to make them, because we like them crisp..so I make them in muffin cups. I have tried these and they sure live up to all the hype and fanfare..they were delicious and I bet you will love them too...

1/4 c chopped fresh parsley, packed tightly
1 Tbsp finely chopped fresh garlic
10 3/4 oz can cheddar cheese condensed soup, undiluted
1 1/2 Tbsp bouillon lobster base
3 c idaho instant mashed potatoes
1 c seasoned panko bread crumbs
16 oz can lump crab, drained
1 large egg, whisked
1/4 c olive oil,divided
1 tsp seafood seasoning, i used old bay, or you can use paprika

Steps:

  • 1. Move oven rack to center of oven. Heat oven to 400^. Spray a 9x13-inch glass dish with buttery cooking spray.
  • 2. In a large bowl, combine parsley, garlic, soup, and bouillon. Add potato flakes, bread crumbs, crab, egg and 2 Tablespoons oil; gently fold ingredients until just mixed.
  • 3. Make 8 patties, each 1 inch thick, using 1/2 cup crab mixture for each patty. Place in prepared dish- make sure they do not touch each other leaving about 2 inch space. Coat tops with remaining oil equally. Bake for 40 minutes, or until golden brown.
  • 4. Great for appetizers baked in mini muffin pans.

1- 4 oz package of Idahoan® Roasted Garlic Mashed Potatoes, prepared per package directions
2 eggs, beaten
2 Tbsp plus ½ cup panko bread crumbs
2 Tbsp all-purpose flour
2 Tbsp parsley, finely chopped
2 tsp lemon zest
2 tsp fresh lemon juice
1 tsp Old Bay seasoning
1 pound cooked lump crabmeat
Olive oil for frying
¾ cup mayonnaise
1 tsp capers, chopped
1 Tbsp lemon juice
1 Tbsp spicy mustard
2 tsp fresh parsley, chopped
Hot sauce, to taste, optional

Steps:

  • Stir together potatoes, eggs, 2 tablespoons panko, flour, parsley, lemon zest, lemon juice, and Old Bay seasoning.
  • Add crabmeat and gently stir to combine.
  • Shape into 10-12 patties about 3 inches wide.
  • Chill on a baking sheet lined with parchment for one hour.
  • Make the remoulade by mixing all the ingredients together thoroughly.
  • Heat oil over medium-high heat. Cook potato crab cakes a few at a time until browned on the bottom, about 2-3 minutes.
  • Carefully flip over and shape with a spatula if needed. Continue to brown on the other side, adding more oil if needed.
  • Transfer to a plate and serve with Remoulade sauce.

1 cup cold mashed potatoes
1 teaspoon vanilla extract

5 Tbsp. olive oil, divided
1 yellow onion, finely chopped
1 small red pepper, finely chopped
2 stalks celery, chopped
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1-1/2 tsp. seafood seasoning
1/2 cup KRAFT Real Mayo Mayonnaise
1 Tbsp. chopped fresh parsley
1 Tbsp. GREY POUPON Dijon Mustard
1 tsp. garlic powder
3 eggs, divided
3 cans (6 oz. each) lump crabmeat, drained
2 green onions, sliced
1 cup flour
2 cups dry bread crumbs
6 Tbsp. butter, divided

Steps:

  • Microwave potatoes as directed on package; place in large bowl. (Do not mash.) Cool slightly.
  • Meanwhile, heat 1 Tbsp. oil in large skillet on medium heat. Add yellow onions, peppers and celery; cook 8 to 10 min. or until tender and lightly browned, stirring frequently. Add Worcestershire sauce and seafood seasoning; cook and stir 1 min. Remove from heat.
  • Add mayo, parsley, mustard, garlic powder and 1 egg to potatoes; mash until potato mixture is smooth and well blended. Add cooked onion mixture, crabmeat and green onions; mix well. Refrigerate 1 hour.
  • Shape crabmeat mixture into 20 patties. Place flour and bread crumbs in separate shallow bowls. Whisk remaining eggs in third shallow bowl until blended. Dip crab patties, 1 at a time, in flour, then eggs, then bread crumbs, turning to evenly coat both sides of each patty with each ingredient. Place on waxed paper-covered baking sheet.

1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
Cocoa powder, for dusting pan
1 large baking potato (about 10 ounces)
1 3/4 cups cake flour (not self-rising)
1 teaspoon coarse salt
1 teaspoon baking powder
1/4 teaspoon baking soda
2 cups sugar
2 large eggs
1 teaspoon pure vanilla extract
4 ounces semisweet chocolate, melted and slightly cooled
1/2 cup sour cream
Whipped cream, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Brush a 12-cup Bundt or tube pan with butter. Dust with cocoa, tapping out excess.
