This is from Marie on another recipe site. Mega suggested the following: "One thing I changed was to use an 8oz brick of low fat cream cheese instead of the milk and flour. " Give it a try!

My family loves soup and this is one of their favorites. It has lots of flavor and is fairly quick to make. It's primarily a mushroom soup but derives a lot of its flavor from other ingredients.

Tips:

  • Use a variety of mushrooms. This will give the soup a more complex flavor. Some good options include cremini mushrooms, shiitake mushrooms, and oyster mushrooms.
  • Don't overcrowd the pan when sautéing the mushrooms. This will prevent them from steaming instead of browning.
  • Use a good quality vegetable broth. This will make a big difference in the flavor of the soup.
  • Don't overcook the soup. The mushrooms should be tender but still have a bit of a bite to them.
  • Serve the soup with a dollop of sour cream or yogurt. This will add a bit of richness and creaminess to the soup.

Conclusion:

This Hungarian mushroom soup is a hearty and flavorful soup that is perfect for a cold winter day. It is also a great way to use up leftover mushrooms. The soup can be made ahead of time and reheated, making it a convenient option for busy weeknights. This recipe is a good starting point, but feel free to experiment with different ingredients and flavors to create your own unique version of Hungarian mushroom soup.
